EASY MEXICAN Cheddar Cheese Dip made with 1 bag of shredded cheese, milk and other simple ingredients. This delicious dip can be served with tortilla chips, crackers, vegetables or on top of nachos! It’s always the hit of the party!
Cheese.
You either love it or you love it. Have you ever met a person who doesn’t love it? Once I met a person who doesn’t like pizza and I ran away from them.
Cheese dip is one of those things that I love, no matter what time of the year or where I’m at. You’ll find cheese dips at pot lucks, friends dinner parties or fancy art openings. No matter what the event, you’ll find me at the snacks table swimming in that cheese sauce (not literally, the bowl isn’t big enough).
Recently my husband asked if I could stop including cheese in some of our dinners. I looked at him and said “What type of monster are you?”. To satisfy him I added some broccoli along with the cheese. See, I can compromise.
With a craving for a cheesy snack during a movie night I threw this together in minutes and served it with various foods to dip. You have your typical tortilla chips and crackers but you also have your vegetables for those wanting a fresh option.
Because nothing says delicious more than a piece of cauliflower smothered in cheese, right?
You most likely have all the ingredients in your kitchen. Besides the creamy cheese I throw tomatoes and jalapenos in there to add a bit more heartiness to it. Other things to throw in would be corn or beans, both would be great!
All you’ll have to do is get a saucepan going with the ingredients, pour the cheese in almost last, then add your tomatoes and jalapeno and it’s done. I love that this only takes 5 minutes to make so while guests are chatting I can be in the kitchen quickly making this to serve warm, while not missing out on much of the conversation.

Mexican Cheddar Cheese Dip

- 2 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 2 teaspoons cumin
- dash pepper
- 1/8 teaspoon cayenne pepper optional, but gives a slight nice kick
- 16 oz bag of Kraft Cheddar Natural Shredded Cheese
- 2 big tomatoes - diced
- 1 jalapeno - seeds removed and diced
Dipping foods
- Tortilla Chips
- Crackers
- Broccoli
- Cauliflower
Instructions
- Over medium heat heat butter in a saucepan. Add flour while whisking it.
- Add your milk, cumin, pepper and cayenne pepper and continue to stir until smooth.
- Stir in your cheese and mix until it's a creamy dipping sauce.
- Add tomatoes and jalapenos and stir with spoon.
- Serve with tortilla chips, crackers, broccoli and cauliflower to dip.

You can served this cold or hot but I prefer it warm. Either way it’s always a hit! It makes about 3 cups of dip, perfect for get togethers. If you need more, you can double the recipe.
