Easy, healthy zucchini corn fritters pan fried on the stove top. These fritters are crispy on the outside and so creamy inside! This is a way I add vegetables to my family’s diet, especially when we’re picking zucchini from the garden! Serve with sour cream, marinara sauce or ranch dip for a simple summer dinner.
Garden Zucchini Fritters with Corn
If it’s Summer, and you’re a gardener, you are probably picking a couple zucchini every week, or even a couple per day! Make some Chocolate Zucchini cake, Chocolate Chip Zucchini Cookies, Zucchini Potato Casserole and then freeze some zucchini for Winter – and then try this Zucchini Corn Fritters recipe!
These fritters are pan fried on the stove top which makes a crispy browned fritter on the outside, but creamy melt in your mouth texture inside! For added sweetness, I threw in fresh corn (you can also use canned corn or frozen corn – just be sure to drain it). The result is delicious zucchini fritters that I think you will love!
Removing water from zucchini
Zucchini contains 95% water, so it’s important that we try to get as much moisture out of it as possible. I like placing it in a colander above the sink, and using my hands to press down, removing the water. After that, I let it sit for at least 15 minutes and then press down one more time.
You can also wrap the zucchini in cheesecloth or a clean towel and use the same method to squeeze the water out of it.
How to Make Zucchini Fritters
Add zucchini, corn and salt into a large colander, mixing and then draining to remove all the excess water.
Start to make the batter by mixing together flour, Parmesan cheese, egg, paprika and minced garlic together.
Add in vegetables, along with a salt and pepper to taste.
Heat up a skillet over medium-high heat and then add drops of zucchini batter onto the skillet, browning on one side and then flipping to brown the other.
Serve with your favorite dipping sauce or sour cream and enjoy!
What to serve fritters with?
Serve warm with sour cream, ranch dip or marinara sauce (my fav). My kids even love them with ketchup because what kid doesn’t love ketchup?
Can I make fritters in waffle iron?
You sure can! Add zucchini mixture into the waffle iron and cook for about 4-5 minutes or until crispy. Repeat to use all the batter.
Can I make gluten free fritters?
Yes, swap the all purplose flour for chick pea flour instead. Make as instructed.
Can I use summer squash instead?
You can easily turn these into squash fritters by using crookneck, pattypan, and younger yellow squash instead of zucchini. Or you can do a 50/50 mixture of zucchini and summer squash.
Other recipe tweaks
- Add 1 small onion, finely chopped up, with the zucchini and corn.
- Instead of flour, use bread crumbs or crushed up Ritz crackers.

Fresh Zucchini Corn Fritters

- 1 ½ pounds zucchini grated
- 2 cups corn
- 1 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 egg beaten
- 1/2 teaspoon paprika
- 2 cloves garlic minced
- salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Add zucchini, corn and salt in a large colander, mixing together and then pressing down with hands to remove any excessive water. Place in the sink and allow to drain for 15 minutes. Press down a few times more to make sure to remove any moisture.
- In a large bowl mix flour, Parmesan cheese, egg, paprika and minced garlic.
- Add in zucchini, corn and a sprinkle of salt and pepper to taste, mixing to combine.
- Add olive oil to a large skillet and heat over medium-high heat. Once heated, add tablespoons of zucchini mixture into the skillet, making small pancake fritter shapes. Brown on one side, and then flip over and brown the other – about 2-3 minutes per side.
- Remove fritters from the skillet, and continue until all the zucchini batter is gone.
- Serve warm with sour cream, ranch dip or marinara sauce and enjoy!

Made as written. Was simple to make and very good- I squeezed as much moisture as I could from the zucchini using a linen towel. Did nothing with the fresh corn kernels- just threw them in the mix. I had a spicy yogurt sauce from another recipe that was great with the fritters. Just a good, basic delicious recipe!
