Scrambled Eggs with Bacon

On slow Sundays, I love making scrambled eggs for my family as a special weekend treat — it’s just something I don’t have time for during the busy week. And, if I do say so myself, I make really good scrambled eggs!

But here’s the twist: these aren’t scrambled eggs with bacon on the side. Nope, this recipe has the bacon cooked right in with the eggs — a perfect match for breakfast! After I make bacon in the oven (I’m telling ya, the best way), then I simply chop it up and add it straight to my scrambled eggs mix!

My kids would happily have scrambled eggs and bacon every day, so this recipe is always a winner — there are never any leftovers! Serve with waffle iron hash browns or stovetop hash browns for an amazing breakfast! Enjoy1

The Secret Ingredient to Fluffy Scrambled Eggs

The secret to achieving light and fluffy scrambled eggs is adding a splash of milk. This simple step makes all the difference by creating a creamy texture and preventing the eggs from becoming too dry. Just whisk the milk in with your eggs before cooking!

How To Make Scrambled Eggs With Bacon

Cook 2 pieces of bacon according to the package directions, either skillet or the microwave. You can use regular bacon or turkey bacon if you want something lower in calories. Once cooked cut it up into 1/2 inch pieces.

Crack eggs in a mixing bowl and add in the milk, salt, pepper and cooked bacon. Whisk together until eggs are beaten.

Melt butter in a skillet over medium high heat. Once melted add in eggs.

Once the egg mixture seems to have set, break it up with a spatula to scramble and flip. Continue cooking and scrambling until eggs are fully cooked and no longer runny. Serve immediately and enjoy!

We like to add Velvetta cheese to make our eggs “cheesy” at the end of cooking.

Very delicious! Too salty! If you are doubling the recipe or more, careful on the salt! Doesn’t need much! Besides that, very yummy recipe.

EVERYTHING is better with bacon. I don’t think I’ve ever met a bacon, I didn’t like. 😉 And scrambled eggs – well, they are what’s for breakfast. That is my kind of happy meal!

Mmmmmm, bacon – its such a guilty pleasure but girlfriend, this turkey bacon is the business. I may have been guilty of plating up bacon & eggs for a cheeky late night snack #thatsjustthegirlIam

My little one is a bacon fanatic – all kinds, including turkey – so we have it often for breakfast. And I love eggs, every which way, so this would be welcomed anytime for us. We sometimes stuff scrambled up eggs and bacon into a soft, warmed tortilla wrap. It makes a great weekend breakfast, along with some sautéed diced potatoes on the side if there’s time.

This was delicious and quick. In the morning I prefer making faster meals so I don’t spend half my day in the kitchen. This egg and bacon recipe was exactly what I needed to find.
