Sausage Potato and Bell Pepper Casserole, ready in 55 minutes. Add sausage, potatoes and peppers into a baking dish and cook, it’s that easy! My family calls this a 10 star recipe!

Need an easy Sausage Potato and Pepper Casserole?

Lots of sausage casseroles require dirtying a bunch of skillets to cook sausage and veggies first, but instead we’re just adding everything into a casserole dish and baking it because who has time for that on Tuesday night at 5:30PM? Not me.

It’s as simple as adding Italian Sausage, potatoes, sliced bell peppers, onions, garlic, chicken broth and spices into a 9×13 baking dish and cooking it until potatoes are tender and sausage is fully cooked.

Bonus: this casserole surprisingly freezes really well! So if you want to make it as a freezer meal make sure to check my freezing instructions below. We freeze a couple of these when we’re picking lots of bell peppers from our garden!

Sweet Italian Sausage

For this casserole, you’ll need 1 to 2 pounds of Sweet Italian sausage, chopped into 1-inch pieces. I usually grab a 1.5-pound package at the grocery store, which works perfectly. Since I’ve got little ones, we keep it mild, but feel free to spice things up with hot Italian sausage if that’s your vibe!

Don’t have green and red peppers?

Feel free to use 2 green peppers, 2 red peppers, or a mixture of whatever color peppers you have (green, red, yellow or orange!).  We mostly use green bell peppers from our garden!

How to Make Sausage and Pepper Casserole

Add all of the ingredients into a 9×13 baking dish, stir to completely mix. By the way, I made this with homemade crockpot chicken broth and it was *chefs kiss*.

Bake until potatoes are tender and sausage is fully cooked, about 45-55 minutes.

Serve this and enjoy! I hope you come back and make it again!

Can this be a freezer meal?

This casserole freezes great! You have 2 ways to do it.

After cooking it, allow to cool and then cover the casserole dish with plastic wrap and aluminum foil. Transfer to the freezer and freeze.

Or if you’re like me and don’t have casserole dishes to lose I scoop this into a large freezer bag and freeze it like that.

When ready to use, defrost in the microwave and then transfer to a baking dish and cook at 350 degrees until it’s fully cooked, about 45 minutes.

Ingredients

  • 1.5 pounds Sweet Italian Sausage cut into 1 inch pieces
  • 4 large potatoes peeled and cubed into bite size pieces.
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 large yellow onion chopped
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 teaspoon Italian Seasoning
  • ½ teaspoon paprika
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees F.
  • Add all of the ingredients into a 9×13 baking dish, seasoning with salt and pepper to taste. Stir to fully combine all the ingredients together.
  • Cook in the oven for 45-55 minutes, or until potatoes are softened and tender.
  • Serve and enjoy this yummy sausage and pepper casserole!

    Very good l used beer sausage. I had to cut recipe in half just me and husband. Live in Northern California 100+ today. Cooked it on the BBQ in cast iron. Excellent. Love your family.
