Broccoli Cheese Soup with Velveeta

Do you know how much I love this Creamy Cheese Broccoli Soup? I made  it for dinner on Friday. Then I made it again on Sunday. And now I’m thinking when should I have it again.  

Broccoli Cheese Soup Ingredients:

You will need:

butter
broccoli (frozen or fresh)
carrots
corn
chicken broth
Velveeta cheese
milk
heavy creamy
garlic powder
dried mustard
cornstarch
water

This Creamy Broccoli Cheese Soup recipe is a family favorite! I love serving it as comfort food on a cold night!  This soup is made with broccoli, carrots and Velveeta cheese!

This soup has all the good stuff in it.  There’s cheese and milk to make it creamy, then there’s broccoli, carrots and corn to make it a vegetable dream.     The soup is incredibly creamy and if you serve it with a piece of bread, you have a perfect dinner.

Velveeta Broccoli Cheese Soup

Velveeta cheese in my opinion makes the most creamiest soups, so whenver I can cut up a loaf of Velveeta, I’m in! You will need a 8 ounce block of cheese for this recipe, to cut up and add to the soup!

This soup only takes 20 minutes to make, with  a few minutes to prepare, making it a deliciou 30 minute and under dinner recipe!

With every spoonful you get a good serving of vegetables covered in creamy cheese sauce.

Broccoli Cheese Soup with Velveeta

This Creamy Broccoli Cheese Soup recipe is a family favorite! I love serving it as comfort food on a cold night!  This soup is made with broccoli, carrots and Velveeta cheese!

Prep Time: 5 minutes minutes
Cook Time: 25 minutes minutes
Total Time 30 minutes minutes
serves 4

Ingredients

  • 1/2 cup butter
  • 4 cups frozen or fresh broccoli florets
  • 1 cup carrots – peeled and chopped
  • 1 cup frozen corn
  • 3 cups chicken broth
  • 8 ounces Velveeta cheese – cubed
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tablespoon garlic powder
  • 1 teaspoon dried mustard
  • 1/2 cup cornstarch
  • 3/4 cup water

Instructions

  • Melt butter. Add in broccoli, carrots, corn and chicken broth.
  • Bring to a simmer for 10 minutes.
  • Add in cubed cheese, milk and heavy cream
  • Stir in garlic powder and dried mustard.
  • Mix until cheese is completely melted (5-10 minutes).
  • In a separate bowl mix cornstarch and water until cornstarch is dissolved. Then add to soup mixture.
  • Mix for about 5 minutes on medium high heat until you reach a thickness you like.
  • Serve, Enjoy.

    Im looking out the window right now and watching the blow off the leaves. This soup would be perfect to have right in front of me right now!

    I love puffy, fuzzy and cozy socks and your coat looks perfect for my northern weather! I need your coat!

    Pamela…I love the coat! I think it looks so cute on you. You’re tiny enough..you can get away with that type of coat. I’d wear it if I were as tiny and adorable as you!

    The soup looks AMAZING!! Yum…yum…yummmmm!!! I will be making it this week for the family. I know that they will love it, and it’s perfect for this week. It’s so cold!! I’d love a bowl right now, our furnace isn’t working at work, and as I’m typing this, the thermometer on my desk says that it’s 48 degrees in here! Too Cold!! 🙂

    Girl this soup looks amazing. I love cheese and broccoli paired together! It’s a winning and kid friendly combination 🙂
    Ok, that coat looks so warm and cozy, but if it’s not going to be warm enough, then I would totally return it and get something warmer. There’s nothing worse then being cold!
    We’re having warm days and cool nights as well. It’s 70 in the day, and then when the sun goes down, it drops to the 40’s. It’s all about layers here in Cali!

    If the coat doesn’t feel warm enough you should definitely return it. I know Nordstrom rack had some really good coats last year…maybe try there? Also, this soup looks AMAZING. I <3 Velveeta 🙂

    I loooooove broccoli cheese soup. I’ve never had corn in it, but that sounds even tastier. I think the coat is cute but mostly because it looks soooo warm and cozy — if it’s not nice and toasty in it, then I’m not sure I would like it as much either.

    Yum! I love comforting soups this time of the year. The weather has been like that here too – it will be cold and then the next day bam, 70 degrees. It’s driving me a little crazy! Hope you had a great weekend!!

    If there is a silver lining about the cold weather, it is ONLY soup. I made a dairy free version last year and it was so good. I made it at least 3 times. Might have to make that again soon, as it is frosting almost every night now. Sigh.

    I have a puffy coat like that too – mine is knee length and purple and I LOVE it. I would wear it all day long if I could. It’s cute and warm, I say keep it!

    Broccoli Cheese Soup is my favorite soup in the world, I think. It is definitely a soup I crave and could eat bowl after bowl of it. We have had some strange weather patterns here in Indy, too. Even our Halloween was officially postponed until the next night here in Indiana, on Friday! Which, of course, was fabulous…because it was gorgeous weather and we celebrated all weekend long. 🙂 Thanks for sharing and have a wonderful week, my friend! xo

    I love broccoli cheese soup. And Velveeta just makes it doesn’t it? It provides the perfect creaminess.

    I love your jacket. I tried one last winter very similar but I just didn’t know if I could pull it off–I’m pretty short and I thought it made me look even shorter.

    When I first glanced at it, it looked kind of like a sleeping bag, but then I looked closely and you know what? It’s actually cute AND looks like it would keep you so warm.
