Chocolate Chip Granola Bars

Easy to make homemade chocolate chip granola bars recipe! These chewy granola bars taste just like Quaker granola bars but are made with simple ingredients you already have in your kitchen!  No baking involved, just mix and chill! My kids love these so much for an afternoon snack.

Chewy Granola Bars Just Like Quaker

My kids used to love Quaker chocolate chip granola bars but I got sick of buying them as their price increased. I decided to start making our own chocolate chip granola bars and was surprised by how easy they were with basic ingredients we pretty much always have in our kitchen!

These taste just like Quaker bars, but even better because they’re homemade! They make for a great afternoon snack or help a late night sweet tooth craving! I hope you try them soon!

You should chill these in the refrigerator for at least 2 hours, but I recommend chilling them overnight. If you are making these during the Summer, especially during a heat wave, let them set in the refrigerator overnight for best results.

Chocolate Chip Granola Bars Ingredients

  • Quick Cooking Oats (1 minute oats)
  • Crispy Rice Cereal
  • Butter
  • Light Brown Sugar
  • Honey
  • Vanilla Extract
  • Mini Chocolate Chips, regular sized is ok too, but we prefer mini!

How to Make Easy Granola Bars

Spray a 8×8 baking pan with nonstick spray.

Pour quick oats and rice crispy cereal in a large bowl, mixing them together.

In a small saucepan melt butter, brown sugar and honey together. Once it starts bubbling, remove from heat and stir in vanilla.

Pour this butter/brown sugar mixture into the large bowl of oats and cereal, mixing it to fully coat everything.

Spoon this mixture into the pan, using a spatula to flatten down the top gently.

Add chocolate chips on top and use a spatula or back of a spoon to gently press the chocolate chips down. This is going to make sure they stick to the bars.

Cover with plastic wrap and place in the refrigerator for at least 2 hours, but I recommend overnight for the best bars that hold together.

Once chilled and set, remove from fridge and cut up into bar shapes. I cut them up into 10 or 12 bars.

Because you sprayed the pan and let the granola bars set, they should slide out pretty easily. Serve and enjoy!

Storing Granola Bars in Fridge

Because these are homemade, I recommend storing these in the refrigerator either in the baking dish (covered with plastic wrap), or place in an airtight container. These will stay good in the refrigerator for a couple weeks.

Chewy Chocolate Chip Granola Bars That Don’t Fall Part!

Ingredients

  • 2 cups quick cooking oats
  • 1 cup crispy rice cereal
  • 1/4 cup butter (salted)
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 3 tablespoons mini chocolate chips

Instructions

  • Spray a 8×8 pan lightly with cooking spray.
  • Mix quick oats and rice cereal together in a large bowl.
  • In a small saucepan melt butter, brown sugar and honey on medium high heat until melted. Once it begins to bubble change heat to low and stir for 2 minutes.
  • Remove saucepan from burner and stir in your vanilla.
  • Pour your hot mixture over your oats mixture. Stir well. You want to make sure every single piece of oats and cereal is coated.
  • Pour your mixture into your greased pan and push down with spatula to flatten it.
  • Sprinkle chocolate chips over top evenly. Use your spatula to press them down so they are embedded in the bars.
  • Cover with plastic wrap and put in the refrigerator to set for at least 2 hours but I recommend overnight for the best results.
  • Remove from the fridge and cut into bar sizes (about 10-12 depending on size you want). Store in airtight container in refrigerator to keep them fresh, good for a few weeks.

    Old fashioned oats work just as well and are healthier. Binding it together with a small batch of easy soft caramel was conceptually weird, but I got over it. ‘Tastes fantastic!

    Love this recipe. I tried it exactly the way it said and than again with 1/4 cup added peanut butter. Both ways turned out perfect, but my family is a peanut butter family so I will be making them with the peanut butter from now on. They were extremely easy to put together.

    Great taste, very close to the Quaker version. However, they completely fell apart. I used the listed ingredients and did everything as instructed. Still wonderful, but hoping for a bar versus loose granola.

      Hey Lauren, I’ve never had this problem! One tip is to really make sure are you are pressing down hard with the spatula before chilling to bind them together. And since it’s peak Summer right now (at least for us), you might want to chill a little bit longer! Hope this helps!

    These were a hit at my house. I didn’t have a problem with them staying together at all. I have 2 kiddos with peanut and tree nut allergies and I have a hard time finding any that are safe for them to eat. These were perfect. Good ingredients with great results. Thank you!

    I thought the maple syrup was the problem also. It’s more of a liquid than honey. I did leave the bars in the refrigerator for 3 hours, so, long enough. Hmmm. Guess I’ll figure it out. Thank you.

    My bars won’t stay together. I substituted the honey for real maple syrup as I saw one person do also. I read everything and did everything exactly the same. These are sooooo good with the maple syrup so I don’t want to use honey. I thought about adding a tablespoon of corn syrup to the pan and cook as instructed. Maybe that would make them stay together better? Please help. Otherwise this recipe is delicious!

      Hey Sandy, I’ve never made them with maple syrup so can’t help a bunch with that. I def think that’s part of the problem though as I find that honey holds the bars together better. How long are you keeping them in the fridge for? Maybe try longer, or even a little bit in the freezer? Hope this helps. 🙂

    Oh, these are great! I didn’t have honey at home, but we make maple syrup so I substituted maple syrup. I also used chocolate crispy cereal, and raisins instead of chocolate chips. Again, just whatever I had on hand. So good! Thanks!
