This Tomato Cucumber Tuna Salad is the perfect fresh Summer salad. Or if it’s not summertime, then it’s the perfect close your eyes and pretend it’s Summer salad! It includes a few garden favorites; tomatoes, cucumbers, red onion and fresh parsley so it’s ripe with flavor. It also includes Albacore tuna which has a delicious, mild and clean flavor. Trust me, you’re going to love it!
It’s still Winter here in NYC and I feel like we’ve had a colder than average last few months. I’m sick of wearing my big Winter coat and pushing the stroller through the windy streets. To comfort my need for wishing for a warmer day, I made this Summer feeling salad that has me dreaming of picking tomatoes in our vegetable garden.
What sets this salad part from other tomato, cucumber salads is the tuna. Do you like tuna? I sure do, but I’m pretty picky about my tuna. My favorite brand is Blue Harbor Fish Co because not only is it delicious, but it is MSC Certified which complies with sustainable practices of fishing. It’s soy free, dolphin safe and has simple ingredients: wild Albacore tuna, water and a touch of sea salt (or no salt option if you want). The key to any great tomato salad is knowing your tomatoes. Tomatoes should be naturally juicy, which makes for a delicious tomato, but you don’t want a watery salad. When using tomatoes for a salad I recommend scooping out the juicy seeds inside. After I chop up my tomatoes I’ll let them drain for a few minutes just so I can make sure all that extra water isn’t going to end up in the salad.
Now the salad is ready to make which couldn’t be easier. Add diced tomatoes, thinly sliced cucumber, chopped red onion, fresh parsley and tuna to a bowl. Then add your dressing which is a homemade mix of olive oil, lemon juice, salt and pepper. Stir and it’s ready! So simple, don’t you love it?
You can serve this salad immediately or chill to serve for the next day. It makes the perfect fresh salad on a hot Summer day. It also makes a great light lunch!

- 5 large tomatoes seeds removed, chopped
- 1 small cucumber thinly sliced and chopped
- 1/2 of a red onion chopped
- 2 tablespoons fresh parsley chopped
- 3 oz package tuna
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- salt + pepper to taste
Add tomatoes, cucumber, onion, parsley and tuna to a bowl. Stir to combine.
Pour in olive oil and lemon juice. Sprinkle salt + pepper to taste. Stir.
Serve immediately or chill for later serving.
