Do you know about Cookie Butter, aka one of the greatest things ever invented, aka omg good get it away from me before I eat anymore, aka omg get it away from me before I eat anymore – no wait a minute, please bring it back to me?  Cookie Butter can be bought at Trader Joe’s and it basically tastes like you are eating a Gingerbread Cookie house.  

Trader Joe’s suggest that you put Cookie Butter on pancakes and snacks, but whatever, I will continue to eat it with a spoon like it was meant to be eaten.  Unfortunately though after many spoonfuls worth a few days ago I realized that one 1 serving is 1 tablespoon. WHAT?   How guilty did I feel? Very.  How many more spoonfuls did I eat to get me out of this guilty depression? Many.

 Once you have it, you will always crave it.  You will change your schedule around to be near Trader Joe’s when at all possible. You will tell yourself you are only buying 1 jar then as soon as you see it will you buy multiples to have as many hits as you crave.    I am not saying I want you to become addicted to Cookie Butter because it will lead you down a long and delicious road full of your childrens missed plays and wondering if people know you are secretly hiding a Cookie Butter addiction or not.  

At the same time I really want you to try Cookie Butter if you can.  I think everyone should taste this goodness once in their life because it really is magical.     I suggest buying a jar, eating 1 spoonful and then throwing it away immediately.    And then because I know this will happen, you will be scraping around your trash can at 3AM to find the rest of the jar – but I am not condoning that, it’s just what’s going to happen.   Actually I think it’s almost impossible to only eat 1 serving at a time, I’m serious.  Try it, you will fail.  I am sorry for not being more positive, but Cookie Butter… it just takes over your life.

So one night recently I decided to eat Cookie Butter a different way then with a spoon.   Enter this Swirled Cookie Butter Cheesecake into my life.  This Cheesecake rules for many reasons:
It’s really really delicious.
This is meant to be a quick recipe.  I am even using a pre-made crust. Feel free to make a homemade one if you have the extra minutes.
This recipe only uses 1 8oz package of Cream Cheese. So many recipes call for 3+ packages of cream cheese, not this one.
Cookie Butter is mixed inside the cheesecake then drizzled on top.  That gives the Cheesecake a delicious cookie taste.
Repeating it’s really really delicious.

Swirled Cookie Butter Cheesecake

Easy to make Cookie Butter Cheesecake recipe that only requires 8 ounces of cream cheese!
Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time 35 minutes
serves 8

Ingredients

  • 1 9 inch graham cracker crust
  • 8 oz package of cream cheese
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • pinch of salt
  • 2 eggs
  • 6 tablespoons cookie butter

Instructions

  • Preheat your oven to 325.
  • Beat cream cheese and sugar together until fluffy.
  • Add lemon juice, vanilla, salt, eggs and 4 tablespoons of cookie butter. Continue beating until all combined.
  • Pour into graham cracker crust.
  • Bake for 30-35 minutes until set.
  • Put remaining 2 tablespoons of cookie butter in microwave for 10 seconds until slightly melted. Drizzle over cheesecake.
  • Chill in refrigerator. Leave cake chill for at least 1 hour before serving.

Notes

If you cannot get Cookie Butter, try peanut butter instead.

    Hehe, love that adorable runaway cheesecake gif 🙂 I’m not a big fan on plain cheesecake but when it’s jazzed up with other flavors – especially cookie butter – I’m all for it! This looks so pretty and sounds awesome 🙂 Love the melted cookie butter glaze – it looks amazing!

    You’re absolutely right… cookie butter is like a drug. It’s impossible to stop at one spoonful. They are setting us up for serving size failure! I actually added cookie butter into crack pie last year (http://sharedappetite.com/crack-pie/) and it was a huge hit. This reminds me I need to start throwing cookie butter into pretty much every baked good from here on out.

    And I need this cheesecake in my life. Immediately.

    Haha, so glad Matthew was able to get you to try some cheesecake. you would have been missing out so much otherwise! (I happen to think that if you like cheesecake or cream cheese, you prob would like sour cream as well). Cheesecake is one of my most favorites desserts. I haven’t bought the TJ’s cookie butter for the exact reason you’re describing- i’m scared of becoming addicted! However, I’m totally going to have to buy a jar to make this…it looks so so good!!!

    Your mayo fear makes me giggle. When I was in junior high school, one of my good friends would always bring a cheese slice/mayo sandwich for lunch that would make me cringe. She always said it was SO good, but I never tried it myself. Eww. I don’t mind mayo, but only in very small quantities. A guy I dated loved the stuff and would literally smear like, half a cup of mayo on his sandwiches until it was literally oozing out of them. This cookie butter cheesecake sounds divine, and really makes me wish we had Trader Joe’s in Canada!

    Pamela!! I’m so excited…first because I can’t wait to try this cookie butter… but most importantly because we finally have a Trader Joe’s about 15 minutes from my house!! They just opened the very first one in Buffalo about a month or so ago. I’ve stayed away (believe me, it’s been hard..) because of the craziness and excitement of the new store, I wanted to wait until it calmed down a little. But now? yeah, I’m heading there…like..now I want to go there tonight. <3

    There was a time when all my sis would eat was white stuff! White bread – white rice – mayo – yogurt – but they could never be togther!
    This cheese cake sounds so easy and delicious – but I am scared to try cookie butter as I have a serious addiction to ALL nut butters … 🙂 So, the way I see it only one solution – I come over to NYC and try a slice of this!

    I love cookie butter, and I *love* cheesecake! This sounds like a match made in heaven.

    Want to hear a horrible mayo incident that has me scarred? I went to a church in junoir high where they had a game, oreo eating contest. You had to see how many oreo’s you could eat in 1 minute. But as a prank, half of the people where given oreo’s with mayo inside. Guess which kind I got? Yup. It was the grossest thing I’ve ever eaten! I never went back to that church either, ha!

    I am so glad I am not addicted to cookie butter, I can see it not ending well at all. I got some, I tried it, but thankfully I don’t have an addiction.
    However, I can imagine this cheesecake tastes quite fantastic because cookie butter tastes divine!

    I’m not much of a cheesecake fan and I think you’ve converted me – and there’s not even chocolate in this! It does look amazing. And so funny about the mayo – I can totally relate. I hated it as a kid – the smell! I would make sure the sandwich guy knew I wanted nothing but the meat and bread on sandwich, particularly not mayo, and I avoided burgers. I couldn’t stand when my sister would slatter her sandwiches with the stuff. I still don’t like it much now on its own but I’m totally fine with it if it’s doctored up with stuff. : )

    My boyfriend is the same way, he wont eat any white and creamy foods. Glad you came around on cheesecake though, I am still working on my boyfriend on that one! Love this cookie butter version- perfect!
