This Mocha Latte Moist Chocolate Cake is double the chocolate and extra moist.  This easy to make coffee dessert recipe is covered with rich chocolate frosting!

Do you dream of moist chocolate cake at night? Ok, me too.  This Mocha Latte Moist Chocolate Cake with Chocolate Frosting is double the chocolate and extra moist.   So if you aren’t dreaming of coffee desserts with some chocolate frosting on top, you will be now!

Moist Chocolate Cake

Mocha Latte Moist Chocolate Cake with Chocolate Frosting

I don’t make cake very often but when I do I like to go the rich route.  The more chocolate, the better.  This cake here is made up of moist chocolate cake with chocolate frosting. It’s a double decker of chocolate love and I hope you’ll be searching for more coffee desserts after trying my moist chocolate cake.

But first… we have to make it!
It’s so hard for me to sometimes get past the batter.   When I see a beater with chocolate batter or chocolate frosting on it I know they aren’t going in the sink or dishwasher.  They are going straight into my mouth.

Does your family ever fight over who gets to clean the beaters?  As a kid when my dad was on the road, I would sometimes have to cook dinner for myself.

Because I had a love of cake from the beginning, I would just make cake batter and eat it in my room.  In my teenage years, this somehow seemed like a good idea.  I still think it’s a good idea… but I’m not sure if I have the perseverance to eat as much batter as I could 15 years ago!

Coffee Desserts

To make it even more rich and moist, we’re adding some mocha latte in there.  Your taste buds are going to go wild after tasting this!  You can use any mocha latte,  home brewed coffee, instant coffee  or refrigerated latte coffee – it’s up to you!

The cake batter will end up a bit runny. Don’t be scared. Just stick with me, this is all part of the magic. That’s what makes this moist chocolate cake so incredibly moist. After baking you’ll find it all worked out.

Another important part is to make sure this cools down for 25 minutes before removing from the pan.  Seriously, do this.  It’s a moist chocolate cake, you need to give it time to firm up so it won’t fall apart.  Please wait… it’s worth it, I promise

Chocolate Frosting Recipe

And our chocolate frosting recipe? It’s made out of magic. And yes, I ate this spoonful right away!

This Mocha Latte Moist Chocolate Cake is double the chocolate and extra moist.  This easy to make coffee dessert recipe is covered with rich chocolate frosting!

For our chocolate frosting recipe, start with mixing the dry ingredients. Cream the butter. For any chocolate frosting recipe, the butter is what makes your frosting so heavenly. The better the butter, the diva-licious this moist chocolate cake will turn out to be. Add in the dry ingredients and the vanilla. Beat it together.

Now here’s where you need to make a judgment call. If your chocolate frosting is too runny, add more powdered sugar. If it’s too thick, splash in some milk. Milk adds to the richness of all coffee desserts, so don’t try to switch it with water here.

Then start frosting your cake up! I like to smooth the frosting on top and then pipe decorations on the side.

If you don’t have cake pipe decorations, I recommend this Smart Living Cake Decoration Set. Its food grade stainless steel, and 100% BPA-free plastic. With 50 pieces, these pipe decorations are easy to use and they are dishwasher safe. A seasoned baker or a new baker, these pipe decorations make cake decorating so much fun!

This Mocha Latte Moist Chocolate Cake is double the chocolate and extra moist.  This easy to make coffee dessert recipe is covered with rich chocolate frosting!
Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time 45 minutes
serves 8

Ingredients

Cake

  • 1 cup sugar
  • 3/4 cup and 2 tablespoons flour
  • 6 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup mocha latte coffee should be hot

Frosting

  • 3 cups powdered confectioners sugar
  • 6 tablespoons cocoa powder
  • 6 tablespoons butter softened
  • 5 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

For the cake

  • Preheat oven to 350 degrees.
  • In a bowl mix sugar, flour, cocoa powder, baking powder and salt.
  • Add egg, milk, vegetable oil and vanilla and mix with hand mixer for a minute.
  • Add in mocha latte coffee and mix with spoon to combine.
  • Prepare (2) 9 inch cake pans by spraying with nonstick spray and flouring them.
  • Separate cake batter evenly and pour into pans. Bake for 32-35 minutes.
  • When done, let cool for 25 minutes before removing them from the pan! This is a important step because they are moist and need time to set.

For the frosting

  • Mix powdered sugar and cocoa powder in bowl with fork.
  • In a medium sized bowl using a hand mixer, cream butter until fluffy.
  • Add powdered sugar/cocoa powder mixture and milk to butter bowl and continue to mix.
  • Add vanilla and mix for a few more seconds.
  • *If frosting is too wet, add more powdered sugar. If frosting is not wet enough, add a tablespoon more of milk*
  • Frost cake as you'd like using the chocolate frosting. I love to pipe additional chocolate frosting on the sides for decoration.

Being the only one in these comments who actually made the cake, I’d like to say this turned out pretty good. For some reason mine baked in 15 minutes, half the time it says to bake it for. Very moist, very chocolatey. You can’t taste the mocha at all, I think it really just serves to make the chocolate taste more rich, honestly. The icing was terrific too. I melted some semi sweet chocolate chips and drizzled them in thin lines over to top to make it look decadent and also add just one more chocolate element to this cake. It is kinda small so if you wanted a big huge cake I’d double this recipe and have one of those super thick cakes like they serve in fancy restaurants. 5/5 would make again! (I’d just double it bc I like big huge cakes)

This cake looks so decadent and chocolatey, yum!! What a great idea to use the coffee flavored drink right in the batter, I’ll have to try this and maybe experiment with other flavors in cakes.
