Fresh Cucumber Side Salad with Red Onions

This cucumber and red onion salad screams Summer in a bowl! Slices of cucumbers and red onions are coated in a apple cider vinegar and sugar dressing. Letting it sit overnight will result in a full flavor marinated salad! Save this recipe for garden season!

Cucumber and Red Onion Salad

If you’re looking for a simple light salad made with cucumbers and red onions, then you found it. Once the garden starts giving us cucumbers and onions, this salad is always on rotation.

It only takes 10 minutes to prep, and then you put in the refrigerator to chill for at least 2 hours, but I recommend overnight if you can for that full marinated zing the apple cider vinegar, sugar, minced garlic and oregano dressing makes when mixed all together.

I usually serve this as a side salad for dinner (delicious served next to grilled chicken, steak and fish) and get togethers, but it’s also great for a easy lunch. Bonus points for eating this salad for lunch while sitting in your garden!

Ingredients

  1. Cucumbers, peeled and sliced
  2. Red Onions, sliced into thin rings, you can use a combo of red and yellow onions if you have to.
  3. Dressing liquids: apple cider vinegar, water, vegetable oil. You can also use red wine vinegar instead of apple cider vinegar if you’d like.
  4. Dressing seasonings: sugar, minced garlic, oregano, salt and pepper

How to Make Cucumber Onion Salad

Slice cucumbers into slices and onions into thin rings. I like to cut the cucumbers into about 1/4 inch thick pieces.

In a large mixing bowl make the salad dressing.

Add cucumbers and onions into the bowl, tossing to fully coat it.

Cover with plastic wrap or a lid and chill in the refrigerator for at least 2 hours. I think letting it sit overnight results in a more marinated salad the next day.

Serve and enjoy!

Can I make this in advance?

Yes, you can. This salad can be stored in the refrigerator covered for 3-4 days. If you remove it from the refrigerator and it seems dry, add a little additional apple cider vinegar and toss.

Ingredients

  • 3 cucumbers peeled and sliced 1/4-inch thick
  • 2 red onions sliced into thin rings
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 1/4 cup vegetable oil
  • 1/4 cup sugar
  • 2 cloves garlic minced
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a large bowl whisk together apple cider vinegar, water, vegetable oil, sugar, minced garlic, oregano, salt and pepper until smooth.
  • Add cucumbers and onions into the bowl, stirring to fully coat.
  • Cover with plastic wrap and allow to chill in the refrigerator for at least 2 hours. Letting it sit overnight will result in a delicious marinated salad the next day! Serve and enjoy!

    I make this frequently using Italian dressing, I am now a huge fan of the apple cider vinegar dressing in this recipe! I also add a few feta crumbles when ready to eat, sometimes I add calamata olives to give it a Greek flair. The possibilities are endless.
