The cute cookies are soft and you will fall in love with the sugar frosting on top! Who knew baking with cucumbers could be so delicious!
Cucumbers aren’t just for making pickles with (although they are sure are yummy). You can also bake with cucumber, similar to how you’d use zucchini or pumpkin (check out my Cucumber Bread recipe!). All you have to do is remove the seeds and grate the cucumber to get a similar texture.
Cucumber Dessert Recipe
I’ve been using cucumber in multiple baking recipes this Summer, like this Sugar Glazed Cucumber Bread, and we’ve been loving it!
For this recipe I was inspired by Oatmeal Sugar Cookies that I used to love as a kid. This recipe uses no oatmeal, but it has the same chewy consistency, along with the sugar frosting. The cucumber is hardly tasted in this recipe, but slightly visible with beautiful green specks decorating the cookie here or there.
After family and friends tell you they love the cookies then you can tell them they are made with cucumbers. They will be shocked, trust me, I do it all the time! Then they’ll ask you for the recipe!

Frosted Cucumber Cookies

For Cookies
- 1/2 cup butter - softened
- 1 cup sugar
- 1 egg
- 1 cup grated cucumber peeled, seeds removed, drained - see notes
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon nutmeg
- 1/2 cup chopped pecans
For Glaze
- 1 cup powdered sugar
- 2 tablespoons milk
Instructions
- In a large bowl mix butter and sugar together with hand mixer. Beat in egg.
- Add in grated cucumber and stir with a spoon.
- Add flour, baking soda, salt, cinnamon, cloves and nutmeg and continue mixing.
- Add chopped pecans into the bowl. Mix so equally distributed.
- Cover with plastic wrap and chill in the fridge overnight.
- Preheat oven to 375 degrees. Grease 2 cookie sheets.
- Roll dough into tablespoon sized balls and place on cookie sheets.
- Bake 12-13 minutes. Allow to cool.
For Glaze
- Mix powdered sugar and milk together in bowl with a spoon.
- Once cookies are cool, dip each one into the glaze.
- Enjoy!

I loved this recipe and they are so good but I made one change. I have some Maple Cinnamon sugar so I rolled the cookie balls in that before baking. So good and then t gives them a different taste then the bread. I also put a whole pecan on top before baking as well as chopped ones in the dough on one batch. I also rolled the first batch in cinnamon sugar. I got 3 dozen cookies from this recipe.

I really liked this recipe but like most people made a few tweaks. After reading some of the comments, I did chill overnight. I cut back by 1/4 tsp on nutmeg and cloves, yes could use a little more cinnamon. Changed cooking time to 11 minutes. Perfect. Who would have know you could use cucumbers in this way. Awesome! I changed it bit by adding 1/cup butterscotch chips, vanilla, and walnuts instead of pecans. Sooo light and sweet enought without frosting. Will try adding raisens next time instead of chips. A real KEEPER!

I was a little skeptical about “cucumber cookies”, but we had so many cucumbers I thought I’d give it a try. These were SO good! You can taste a hint of the cucumber taste but the spices are a nice combination. And so fluffy! Thank you for the great, unique recipe!

I really liked the texture & softness of the cookies. I found the nutmeg & cloves too overwhelming. Could not taste the cucumber. Would make them again leaving those out & using more cinnamon.

I didn’t count looks like about 100 cucumbers this year, everything else was dormant pretty much, bad year for the garden late summer early rain, I will be making the cookies and the loaf, already pickled and also some refrigerator pickles, any other ideas please let me know, gave away a lot too. Not a bad tasting cookie. Has a unique flavor. Very good summer recipe. I only needed to cook for 10 minutes and I did not put batter in fridge overnight. I could see adding some almond extract to the cookie or even the icing.

Yummy. Just made these. I had no pecans so i put in milk chocolate chips. With the chocolate in it there was no need to put icing on them. Very good!! a great way to use up the cucumbers 😀
