Cheesy Chicken and Cauliflower Casserole

We love this cheesy cauliflower casserole so I hope you do too! It’s simple to throw together, filled with yummy cauliflower and juicy chicken, and oh yeah, that cheese sauce! Well you might need to lick the spoon when it’s done.

It’s hearty enough as a main course (we usually serve with dinner rolls or dill bread to dip in the sour cream cheese sauce), but you can absolutely serve as a side dish if you’d like too. However you serve it, just try it soon!

Fresh Cauliflower is best! But…

I love plucking fresh cauliflower from our little garden for this casserole, but frozen florets will do just as well when the harvest is quiet. No cauliflower on hand? Broccoli’s the perfect stand-in when you need it.

Very yummy . I didn’t have fresh so I used frozen 16 ounces of cauliflower. I also added some pasta ( before cooking it was a cup. I seasoned my chicken and cauliflower. Stopped the casserole with some leftover chip crumbs so good.

I made this over the weekend. Even my teenage son and his friend loved this dish and this friend refuses most veggies! So delish. Chef’s kiss!
