Even though these are called “cookies” they’re really not cookies at all, but I find them to be a delicious cookie substitute for holiday gifts, bake sales, and even leaving out for Santa (wink wink).  They’re not made with flour or butter, but instead only require 4 simple ingredients – chocolate chips, peanut butter chips, peanuts and chow mein noodles.  Yup, chow mein noodles!  You can use the skinny ones that come in the can or you can use the wide ones that are usually sold in a bag, I prefer the wide ones.

Who knew that crunchy chow mein noodles could be so delicious covered in semi-sweet chocolate?

Once you melt the chips in a sauce pan, you’re going to add your chow mein noodles and peanuts into it, mixing around quickly (the chocolate sets quickly).  You’d think that adding the chow mein noodles to melted chocolate would cause them to get soggy, but instead they keep their crunch!

With your hands or a spoon, form large tablespoon sized clusters and put on a piece of wax paper for easy cleanup!   Because I love the combination of sweet and salty (like these Double Chocolate Chip Cookies!), I always add a dash of flaky Maldon sea salt on top.

After the salt is added, throw in the refrigerator for about 2 hours to cool so the chocolate completely sets.   After that, dig in and good luck not eating them all at once!CHOCOLATE CHOW MEIN Noodle COOKIES are my family's favorite! I store these in the refrigerator or freeze them for longer periods.

Servings 24 cookies

Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1 cup peanut butter chips
  • 2 1/2 cups chow mein noodles
  • 1/2 cup salted peanuts

Instructions

  1. Prepare a cookie sheet with wax paper on it for easy cleanup.
  2. In a medium saucepan melt chocolate chips and peanut butter chips over low-medium heat, until completely melted. Remove saucepan from stove.
  3. Add chow mein noodles and peanuts to the saucepan and mix. You want to do this quickly as the chocolate will set fast.
  4. Spoon out tablespoon size mixture and place onto wax paper. Continue doing this until you have no more mixture left.
  5. Place in refrigerator for 2 hours before serving.

Recipe Notes

You can use cashews instead of peanuts if you'd like.

I like to store these cookies in the refrigerator, or freezer to make them last longer.
