A protein packed Double Chocolate Protein Oatmeal breakfast recipe! Who doesn’t want chocolate for breakfast?
Boy, it’s gotten chilly here quick. Ever year I say the same thing about the weather changing so fast. One week you’re dabbing the sweat away on your face and then suddenly you need gloves to keep your fingers from going numb in the garden. The air conditioner is out of the window and we’ve moved on to bringing the big comforters out of Winter storage. The cats are slowly walking towards their heated cabins (yes, they are heated houses and yes, they are spoiled), Xanadu is knocking on the blankets every night to get under and they’re wanting to snuggle on their mama all night long.
Luckily I love Fall and I love being chilly. I love sweaters, coats, boots and the crisp feel of the chill on my face in the morning. As the seasons change so does my choice of food. Near the end of September I start to get a love of Earl Grey and English Breakfast teas back instead of my usual green tea in the Summer. My breakfast of a protein bar slowly transitions into a pumpkin English muffin with a little bit of soy butter on top. One breakfast I’ve been loving (and admit to having this for lunch too) is Double Chocolate Protein Oatmeal. I haven’t said anything on the blog but I’m 4 months meat free. I quit cold turkey (literally) eating meat a few months ago and haven’t had any regrets. I look forward to veggie black bean burgers and love my vegetable soups to keep me warm. With meat no longer in my diet I started to feel tired in the first few weeks. I wasn’t taking any supplements and I wasn’t really looking at what I lacked, protein. Suddenly I started putting protein powder in my foods, eating protein bars and drinking shakes and it was such a turnaround on how I felt.
With this Double Chocolate Protein Oatmeal I get what I need: protein to keep energy up and chocolate. Because who doesn’t need chocolate? And who doesn’t need chocolate in the morning? I look forward to waking up now!
There’s a bunch of protein powders on the market but while browsing endlessly at Target I found Vega Essentials Shake in the protein aisle. It seems to be a popular choice as they were almost all out. So I grabbed a bottle of Vega Essentials and a pack of cookies (because why not) and a pair of socks (because Target always lures me in with their socks) and a pack of pumpkin stickers (darn $1 section) and finally made my way to get checked out. Then I walked home and started to dream up some recipe ideas, besides the usual shake.
For my Double Chocolate Protein Oatmeal you need one scoop of Vega Essentials powder and a few basic ingredients that I know you have in your pantry. Unlike other chocolate oatmeal recipes you don’t need cocoa powder because the protein powder adds enough chocolate taste. I used vanilla almond milk because I love that stuff, but if you want to use regular milk you can surely can.
The added chocolate chips on top double that chocolate taste, especially adding delight as they melt. If you want to step up your game, add a sliced banana or a handful of berries on top. Go crazy with some powdered sugar if you want, that sounds like the perfect weekend splurge!
- 1/2 cup milk (regular or almond milk)
- 1 scoop of chocolate protein powder (I used Vega Essentials)
- 1 tablespoon sugar
- 1/4 teaspoon vanilla extract
- dash of cinnamon
- 1/2 cup old fashioned rolled oats
- handful of chocolate chips
- Whisk milk, protein powder, sugar, vanilla extract and cinnamon in a small pot over medium high heat for 3 minutes.
- Stir in the rolled oats and continue to cook for 3-4 more minutes.
- Put the oatmeal in a bowl and put a nice handful of chocolate chips on top!
