Don’t have any butter? That’s ok. Today we’re going to make some No Butter Homemade Pancakes. They’re just as delicious as butter made ones… maybe even better! We love these pancakes so much in our house that they became our #1 pancake recipe!
I wish I could say these pancakes were created because suddenly I wanted to make healthy pancakes and do without the butter, but the truth is that we were out of butter. Do you often run out of butter too?
No Butter Pancakes Recipe
Instead of butter we’re going to use 2 tablespoons vegetable oil and 1 cup milk for the liquid ingredients. Even with no butter, these pancakes are going to be extra fluffy and moist!
First you’ll want to mix your dry ingredients together…like the flour, sugar, baking powder, baking soda, salt and cinnamon!
Now add your wet ingredients to the bowl, the milk, eggs, oil and vanilla! Don’t you love how you probably already have all the ingredients in your kitchen? Btw, I’ve been buying a big bottle of vanilla extract that lasts forever – it’s so much more economical than buying those small bottles!
Spray a griddle or pan with nonstick spray and then heat the batter over medium high heat for a few minutes, making sure to brown both sides of the pancakes!

And if you really love them, try making a double or triple batch to freeze! You’ll just need to throw them in a freezer bag to freeze. Then you’ll microwave them just like you do for any store bought frozen pancakes. Except these ones are so much better than store bought pancakes because they’re homemade!

No Butter Homemade Pancakes
NO BUTTER Homemade Pancakes are fluffy and so easy to make! They're so good you won't miss the butter at all (that makes them more healthy too!). These made from scratch pancakes are my favorite Saturday morning breakfast, my family considers them the best!
- 1 cup flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup milk
- 1 egg
- 2 tablespoons vegetable oil
- 1/2 teaspoon vanilla
Combine flour, sugar, baking powder, baking soda, salt and cinnamon in a bowl. Make a well in the center.
In another bowl mix together milk, egg, oil and vanilla until combined.
Pour wet mixture into dry mixture well. Mix until completely combined.
Spray a griddle or pan with nonstick spray. Heat over medium high heat.
Pour 1/3 cup of batter for each pancake on hot griddle. Brown both sides.
Serve hot with maple syrup on top.
