Watermelon & Strawberry Lime Mint Popsicles

I am kinda in love with these popsicles.  And because they are healthy, I can totally eat as many as I want a day with no regrets!  Isn’t that the best?


These popsicles have watermelon, strawberry, lime and mint in them.  As a sweetener you can leave as is or you can add a little honey (that’s what I did).  With the fruit already sweet, you don’t’ need much additional  honey – a little goes a long way.   And can we talk about how easy they are?  You just throw the ingredients in a food processor, pulse it, pour into popsicle molds and freeze.  Boom, done!   Amazing!

These popsicles have been helping my post dinner dessert craving to try something new besides chocolate, and they are perfect for the 5PM “I’m hungry!” snack attack.    With summer winding down, why not take a minute out of your day to sit on your porch, your roof, your fire escape and enjoy one of these popsicles.

Watermelon & Strawberry Lime Mint Popsicles
  1. 4 cups fresh watermelon, chopped
  2. 1 cup fresh strawberries, hulled
  3. 1/4 cup mint leaves
  4. 2 tablespoons lime
  5. 1 tablespoon honey
  1. Take all ingredients and put in food processor.
  2. Pulse until smooth.
  3. Fill popsicle molds and freeze.
  1. This makes 6 popsicles.
  2. When ready to eat, run the popsicle mold under warm water or just hold with hands on a hot day to slide the mold off.

Here’s all your ingredients. I was able to pick all mine from the garden! The watermelon from the garden has been a highlight this summer.

Throw everything into your food processor.

After a few pulses you will have this amazing smelling watermelon liquid.

Fill your popsicle molds up.  Tip: If you have slightly some left over,  fill up some ice cube tray spots and throw them in a glass of water once frozen. ๐Ÿ™‚

Once they’re frozen, then you can enjoy!

They taste sweet and you can taste every single ingredient so distinctly.

I love that the watermelon is still clearly visible in the popsicles as well.

These are definitely going to become staples in my popsicle rotation.  I just love that they are so stocked full of healthy fruits!
