Sugar Glazed Cucumber Bread

Sugar Glazed CUCUMBER Bread recipe that’s delicious and moist inside. It tastes like zucchini bread, but it’s made with 1 cup grated cucumber.  This healthy dessert recipe is easy to make and is a great way to use up cucumbers.  A optional sugar glaze is poured on top once baked!

This weekend there were many surprises in the garden including a monster pumpkin plant that just won’t stop growing and pounds of potatoes waiting for us under the soil.   And then carrots were pulled, jalapeno peppers were picked and cucumbers were spotted.  

These are all vegetables I was hoping for, but maybe in a few weeks…. but in typical garden fashion, they make their own rules and showed up to the party early.  I couldn’t have been more happy to see them!

I saw a few baby cucumbers growing on the vine last weekend but somehow those babies transformed to multiple large cucumbers in just a few days, ready to be picked and enjoyed.   My Half Sour Pickle recipe and Marinated Cucumbers is a favorite way to use cucumbers, but I wanted to explore how to bake with them! Hrm, what to make with cucumbers…….

Ta-da, the result is this delicious Sugar Glazed Cucumber Bread!
(PS. Don’t forget to try my Frosted Cucumbers Cookies too!)

Baking with Cucumbers!

You’re going to love this Cucumber Dessert recipe. Cucumber Bread is similar to Zucchini Bread, but instead is made with grated cucumbers.  After the bread cools, a delicious powdered sugar glaze is poured on top to make it really special.  Some people have commented they’ve made the bread without the sugar icing and still loved it, so it’s optional (although I highly prefer you try it!)  

This recipe is perfect for Mom and Dad, but also perfect for toddlers and kids! Even my 2 year old loves a piece of this for breakfast in the morning!

Easy Cucumber Bread Recipe

This recipe calls for 1 cup grated cucumber.  If you have never grated a cucumber I’m going to walk you through it quickly. You’ll probably 2-3 small cucumbers or 1-2 large cucumbers to equal 1 cup.

Next peel the cucumber.  Have you ever seen a cucumber nude before?! Well now you have.  I just use my potato peeler for this.

Now remove the seeds with a spoon.  Make sure to get all those seedy watery guts out too.

Grate the cucumber until you get 1 cup worth. I use my cheese grater for this.  Cucumbers are watery so this gets a little messy.

Tip!

Grated cucumber freezes great!  So if you have a bunch of cucumbers, you can grate them, throw into individual 1 cup freezer bags and make this bread throughout the Winter!

Now, this is a important step that you can’t skip.  Cucumbers are really watery, 96% water to be exact.  After you grate your cucumbers, place in a mesh strainer and drain. Use your hand to press down on the grated cucumber to make sure to remove all the excess water. I like to additionally let the cucumber sit in the strainer for 15 minutes, and then give it one more press with my hand after that.

If you don’t drain, your bread is going to be soggy and fall apart. You don’t want that.  

Continue following the recipe, mixing all the ingredients together. Spray a 9×5 loaf pan with nonstick spray and then pour the batter in. Bake for 60 minutes.

And out comes this delicious Cucumber Bread!

Let cool in the baking dish for 15 minutes and then carefully transfer to a wire rack or plate. Once cooled, drizzle the sugar glaze on top.

And just like that you have delicious Sugar Glazed Cucumber Bread!

Once you cut a slice of it you can see small specks of the green cucumber, it’s absolutely gorgeous!

Can I freeze this Cucumber Bread?

Absolutely! I often make a couple batches when we have too many cucumbers! I bake the recipe as is (without the sugar glaze), and then once cooled I transfer to freezer bags.

Once we’re ready to eat it, I’ll defrost overnight in the refrigerator and pop it in the microwave or oven to heat it up. After it’s heated, I’ll make the sugar glaze and pour it on. And just like that I have fresh Cucumber Bread whenever I want, including in the Winter!

Ingredients

For bread

  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 cup grated cucumber peeled, seeds removed, drained – see notes
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • 1 1/2 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped pecans optional

For glaze (optional)

  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

For bread

  • Preheat oven to 350 degrees F.
  • In a large bowl mix eggs, vegetable oil and sugar together with hand mixer.
  • Add grated cucumber, vanilla and lemon juice. Stir with spoon to combine.
  • Add flour, baking soda, salt, baking powder, nutmeg and cloves to bowl. Continue to sir with spoon.
  • Add pecans into the bowl. These are optional but highly recommended! Stir again.
  • Spray a 9×5 loaf pan with nonstick spray. Add batter into loaf pan.
  • Bake for 60 minutes.
  • Let cool for 15 minutes. Remove and transfer to wire rack to completely cool.

For glaze (optional)

  • Mix powdered sugar and milk together in bowl with a spoon.
  • Once bread is cool, pour glaze on top.

Notes

To get 1 cup grated cucumbers: peel your cucumbers, remove the seeds and grate with cheese grater. After cucumbers are grated, place in mesh strainer and press down with hand to remove water.  Let grated cucumbers sit for a additional 15 minutes in strainer and then press down again with hand.

    I made muffins with this. I halved the sugar and subbed cinnamon for cloves because I’m not big on cinnamon. The muffins were moist and tender but I could taste and smell a faint hint of cucumber that made these not worth it for me! My son loves them however he’s eaten almost all of the muffins by himself. We have heirloom cucumbers that do have a very strong flavor so maybe that’s why?

    Throw the shredded cucumber in a tea towel and wring it out to dry cucumber out faster and more thoroughly,
    Used raisins inst of nuts.

    This bread is delicious! Spot on recipe. I followed it exactly, except for the sugar glaze – I don’t even think it needs it, it’s so good. (I will try the sugar glaze when I try your cucumber cookie recipe next!)

    Delicious! My husband wrote a children’s poem referencing a pickle cake. I laughed and said it’d bake him one. Cucumbers are as close to a pickle as I dared, thank you so much for your recipe!

    How do you drain the cucumbers? Lay them out on a paper towel? Also do you grate them and measure them before or after being drained?

      Hey Kay, please see post for full picture directions on how to do this. I do this with a mesh strainer over my sink. If you don’t drain, your bread batter is going to get watery and you don’t want that. After I drain for 30 minutes, I use my hand and press down on the grated cucumber just to make sure all the excess water is drained out.

    Good recipe for using up cucumbers. Don’t taste them. Found this recipe too sweet for me as I’ve been cutting down on sugar for awhile now. Will cut sugar next time. Easy and will make again.

    I’ve grated and frozen zucchini for winter bread but never tried cucumber. Question: Do you remove the water before freezing?

      Hey Grandma, I do remove the water before freezing, but I also do it again after it defrosts as sometimes it can get watery while freezing. Hope this helps!

    My brother kept leaving cucumbers from his garden at my door. I had to do something with them, besides all my other summer salads.
    I found your recipe for cucumber bread. I was a bit skeptical. I made two loaves, one for my brother and one for my house. My brother said that him and his family loved it, and finished it in a day!
    My husband, who does not touch veggies with a 10 ft pole had a piece, he said he liked it. I still haven’t told him it’s cucumber bread. I loved it as well. Simple to make. The sugar icing is a nice touch.

    I have so many cucumbers and when I found this recipe I was so excited. Just tried my first bite of this bread and OMG, it is the best bread I’ve ever made. Better than banana, better than zucchini. I’m going to try the cucumber cookie recipe next. Thank you for this excellent recipe!!

    Had 20 cucumbers… Found this and the cookie recipe. Tried this one first.
    Subbed GF flour, added xanthum gum.
    Used small muffin tins, (1 doz) cooled, removed & inverted, then iced.
    Iced with lemon glaze and a nutmeg glaze.
    Their great! The nutmeg glaze is a hit!
    Cannot taste the cucumbers :0)
    So excited… And froze the unused ones as suggested.

      Made the bread a couple of hours ago,I think it needs a little more spice,maybe a 1 teaspoon of cinnamon in the batter.Very good,and different.
