Dairy Free Oatmeal Peanut Butter Cookies

Delicious Dairy Free Oatmeal Peanut Butter Cookies made with vegan butter and vegan chocolate chips!

Did you wake up recently and there was snow on the ground?  If so, what do you do?

Do you grumble because you have to march outside and shovel right away? Do you grab a cup of tea and cat, sit near the window and admire the white wintry beauty?  Do you throw on your boots and run out and play in the snow no matter what your age?  I fall into the 2 last categories.

Delicious Dairy Free Oatmeal Peanut Butter Cookies made with vegan butter and vegan chocolate chips!

It’s funny, I always tell myself when it snows I will just throw on a coat and bundle up and not play in the snow, just admire it from a distance.  After all, I don’t want to get wet and freeze.  Then as soon as I step out into the snow and see the piled up drifts I turn into a 6 year old and suddenly here I am….
Snow January 2014_4

So after we came in from the snow and took off our boots (for the cats to sniff cautiously) then I made some hot chocolate (dairy free!) to get my fingers warm as some of them were a bit unable to move.  After that I immediately needed cookies, I was craving them bad.  So I got out the supplies and these Dairy Free Oatmeal Peanut Butter cookies were born.     Snowy high 5’s all around.

A few notes:
These are dairy free!  Dairy free baking is not as difficult as I feared, in fact it’s pretty darn delicious.  Even Matthew who loves his butter and milk said these cookies were great.  I’ve been experimenting alot and I made some dairy free chocolate donuts that I will post next week that will make you cry with happiness.  Seriously. Tears and all.
This batch makes approximately 18 cookies.
For butter I use Earth Balance Buttery Organic spread.
The peanut butter and cinnamon really makes these cookies smell nice.
The cookies are moist but they have a nice crunch due to the oatmeal.  I love having a cookie I can sink my teeth into.
I added chocolate chips, I used Sunspire Vegan Carbon Chips. In the past I have used these for dairy free chocolate fudge and they worked well, but in the future for any baking which involves melting or hot temperatures I probably wont use these chips as they melted pretty quickly.   I found out later that all King David chocolate chips  are dairy free and are sold at my kosher supermarket below my apartment building so I will be using them from now (they are so yummy, even eating them by the handful is a treat!).

Grab a cookie (or 2!).  Enjoy!

  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/4 cup creamy peanut butter
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cup quick cooking oats
  • 1/2 chocolate chips or vegan chocolate chips

Instructions

  • Cream together butter, white sugar, brown sugar and peanut butter.
  • Add egg and vanilla, beating until mixed.
  • Add flour, baking soda, salt and cinnamon and continue to beat until mixed.
  • Add oats and chocolate chips, stirring with spoon until equally distributed.
  • Cover and chill in refrigerator for 1 hour.

Hi Judith, these are dairy free cookies – not vegan. If you want to turn them vegan it’s easy – just use egg substitutes instead.

These look LUSCIOUS! I love the snow! We had our first (and probably only) snow of the year the day before I left for New Zealand…lucky me! I got to enjoy it, and then fly into the nice hot sunshine! Best of both worlds 🙂

I LOVE your stories and your carefree nature Pamela!! That post brought back memories from my childhood. Of playing outside while my dad shoveled the driveway. (especially during the blizzard of ’79 when the snow drifts were up to our roof!!) I love a good chewy oatmeal cookie and these look heavenly!!

You guys looked like you had so much fun and I am totally digging the blue hair 😀 I love to play in snow like a kid, unfortunately this winter its been to wet to snow but never mind I shall enjoy these cookies while watching the stormy rain through the window!

Matthew’s winter beard is awesome! Aaron would be envious, he has two little sparse spots in his beard that make him feel self-conscious if he grows it out. I’ve said to him that a beard ‘comb-over’ is totally acceptable but for some reason he just looks at me weirdly 😉 The blue hair is gorgeous. As are these cookies! Oh, and I’m reading this on a 30-something degrees C day so snow sounds wonderful! xx

I love the snow!!! If I didn’t have to go to work, I’d totally go outside and play for a whiile and then come in and have hot cocoa- my snow day routine when i was growing up 🙂 It’s no fun that adults don’t get snow days! These cookies would go well with my hot cocoa warm-up !

I definitely think snow is a lot of fun, but here in Detroit, we were just hammered with it. There’s no place for it all to go when we shovel. There’s mounds of it higher than our porch! It’s just crazy!

These cookies look great – I doubt anyone could tell they were dairy free if you didn’t tell them.

I fell into the first category. I do not miss snow. At all ;p You guys make it look really fun though! Too cute =)
My dad was like your dad, he always got the shoveling done right away and then would help out the neighbours. If he had to work late, he would bribe me with takeout pizza to shovel for him (my favourite nights!!!!).
    These cookies look delicious!

Jealous of your snow day! It looks like so much fun. Don’t get snow at my house here near San Francisco, but driving up to Lake Tahoe this weekend. So I’ll be playing in the snow soon enough : ) These cookies sound delicious. I love oatmeal in cookies, makes me feel like they’re basically a health cookie since there’s oatmeal in it. Ha!

I love it when we have a snow storm and I can stay indoors, watching it all from my window. With a cup of tea and my two kitties. It’s the frigid, arctic cold that I detest! Yummy-looking cookies. I too experimented with dairy-free baking just yesterday, with great results. I’ll have to try your cookies too!

Here is my latest pregnancy craving –oatmeal cookies. What perfect timing! And I have everything in my pantry –woooo!

I love playing in the snow too. We got our kiddos sleds for Christmas and I might be just as excited as they are to use them. Now if only it would snow more than a dusting here.

Ahhh! I totally remember the blizzard of ’93!! It was on my friend’s birthday – and she was so upset that it snowed that late!
Speaking of snow days, we are snowed in. Or well, I mean, everything around here is closed, but not because of the snow. It’s because of the cold. With the wind chill right now, it is -34. That’s negative. Both in temperature and in ‘not good.’ Brrrr!
But … some awesomely yummy cookies could surely change my tune! I might just need to whip up a batch with my stir-crazy kiddos tomorrow (since they already called off school!). And everything is in the pantry – so I don’t need to venture out into the frozen tundra for ingredients! Score!!

The pics look fun, but I don’t miss waking up extra early to shovel my car out just so I can drive to work. I guess living in the city is easier when it snows since you can always walk somewhere. And I definitely don’t miss the cold 🙂 But I sure would love a few of these cookies. They look delicious!
