Have fresh heirloom tomatoes to use? Then you’re going to love this classic spaghetti recipe with fresh heirloom tomatoes and minced garlic! This is one of the times I really wish we had smell-o-vision because your kitchen is going to smell SO GOOD when cooking it!
Although a little extra work then just making traditional spaghetti with tomato sauce, it’s worth it for such a delicious home cooked meal that celebrates the freshness of the tomatoes.
You want to use fresh, juicy tomatoes. Heirloom or roma tomatoes are both great! And it will taste the best if the tomatoes are just picked from your garden!

Fresh Tomato Spaghetti Ingredients
- Heirloom or roma tomatoes are best for this recipe. If you are making this recipe out of tomato season and you only have canned diced tomatoes, that’s ok, but please please please first try it with fresh tomatoes!
- Fresh garlic, minced, adds so much flavor and fragrance to this dish. Makes your kitchen smell like heaven!
- Sugar helps balance out the acidity of the tomatoes. A little bit goes a long way.
- Spaghetti is a simple noodle that works great with this dish. If you want to use a skinnier noodle like angel hair, or a thicker noodle like fettuccine, you can do that too.
- Parmesan cheese makes the pasta a little creamy.
- More, you will also need olive oil, Italian seasoning and salt and pepper.
How to Make Pasta with Tomatoes
We need to first remove the skins from the tomatoes with a quick boil. It might seem like extra work but trust me, it’s going to be worth it!
Boil tomatoes in a large pot of water until you see the tomato skins start to rip.
Remove from the pot and run under cold water until you can easily touch them (careful, they’re hot!). Peel the skins off the tomatoes (compost them or make tomato powder!) and then chop up. Note: This gets a little messy, so have a towel nearby!
Saute garlic in a large skillet, and then add in chopped tomatoes, Italian seasoning, sugar and salt and pepper. Bring to a low simmer, stirring often.
Cook spaghetti according to the box. You want to make sure not to overcook it so spaghetti is al dente.
Drain spaghetti and place into the skillet, tossing it to coat with the fresh tomatoes and garlic.
Continue to cook to warm everything up together, adding in Parmesan cheese and stirring.

- 2.5 pounds fresh heirloom or roma tomatoes
- 12 ounces spaghetti (3/4 of a box)
- 2 tablespoons olive oil
- 5 cloves garlic minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon sugar
- salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Put tomatoes in a large pot and cover them with cold water. Bring to a boil and continue to cook until you see the tomato skins start to rip, this happens quickly once the water starts to boil. Use a slotted spoon to remove the tomatoes from the pot and run under cold water until you can easily touch them. Peel the skins off tomatoes (compost the skins) and then chop the tomatoes into small pieces.
- Cook spaghetti according to box directions. You want to make sure not to overcook, so the spaghetti is al dente. Tip: I cook the spaghetti in the same pot that I used for the tomatoes, since the water is already hot to speed things up. Drain pasta and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds. Mix in the chopped tomatoes, Italian seasoning, sugar and salt and pepper. Reduce heat and continue to simmer, stirring often, for 10 minutes.
- Add spaghetti into the skillet, tossing to coat, and continue to cook for 5 so it’s all warmed up. Sprinkle Parmesan cheese on top and then stir again. Serve and enjoy!
