Fruity Pebbles Chocolate Pudding Cookies

Chocolate Pudding Cookies made with FRUITY PEBBLES are the BEST!  This simple and fun recipe is one of my most requested desserts!  I love how each bite has chocolate bites and Fruity Pebble cereal in it!

If you’re like me then you might bake something to take with you on a trip.  I love making a batch of banana bread to eat for breakfast in the hotel, or sometimes it’s muffins.  This time though I decided to make Fruity Pebbles Chocolate Pudding Cookies for our upcoming trip to London! They are the perfect treat to reach for instead of grabbing a $5 chocolate in the mini bar (candy bar?).

Fruity Pebbles Chocolate Pudding Cookies. These cookies will melt in your mouth with ooey gooey chocolate bites and delicious Fruity Pebble cereal.

These cookies are awesome for many reasons:
Fruity Pebbles – who doesn’t love them?  They were a part of almost everyone’s childhood.  Plus they’re colorful and cute.
Pudding – again, who doesn’t love pudding?  This is going to make the cookies moist and creamy and oh so delicious!
Chocolate  – enough said.  When melted, even more creamy.
All formed into a gooey ooey cookie that you’ll fall in love with.

You’re going to need 1 cup Fruity Pebbles. This is added at the very end before you bake them.  Each bite of the cookie is going to have a little of Fruity Pebble.

Delicious recipe for Banana Muffins made with white chocolate chips.  These are perfect for a hearty breakfast on the go!  Baking time is 20 minutes and makes 8 regular size muffins

These banana muffins are based around one of my most popular recipes on the blog, Mini Moist Crumble Banana Muffins.  I receive emails all the time from people proclaiming their love to these muffins and expressing how much their kids like them too!  The tweak I made to these is first I made them full size, so they’re hearty enough for breakfast.  I also added some high quality white chocolate chips to really give each bite a sweet balance with the bananas.

The banana taste is there, but it’s not super strong. I shared these with my banana bread loving friend and my not so much banana loving Matthew and both of them loved them so much they ate multiples.  They’re a winner across the board.

Moist Banana White Chocolate Chip Muffins
Print
Ingredients
  1. 1 cup flour
  2. 1/2 teaspoon baking soda
  3. 1/2 teaspoon baking powder
  4. 1/4 teaspoon salt
  5. 2 ripe bananas
  6. 1/4 cup + 2 tablespoons sugar
  7. 3 tablespoons melted butter
  8. 1 egg
  9. 1/2 cup white chocolate chips
  10. Optional: Melted white chocolate to drizzle on top when done
Instructions
  1. Preheat your oven to 350 degrees.
  2. Spray your muffin pan with nonstick spray.
  3. In a bowl mix flour, baking soda, baking powder and salt.
  4. In another bowl mix bananas, sugar, butter and egg until smooth.
  5. Add flour mixture into banana mixture and continue to mix so everything is combined.
  6. Add chocolate chips and stir with spoon to evenly distribute.
  7. Spoon this into the muffin pan, filling each muffin spot 3/4 full.
  8. Bake for 18-22 minutes or until the sides of your muffins are slightly brown.
Notes
  1. Makes 6-8 regular size muffins.

EASY Step by Step Instructions on how to freeze Sugar Snap Peas without blanching! This is a simple way to preserve your Summer Sugar Snap Peas to last for months without needing to can them!  I love freezing peas to use in Winter soups, casseroles and stir fry meals!

We always grow sugar snap peas twice a year, once in the Spring and once in the Fall.  With close to a hundred plants, we end up with big harvests, often picking over 10 pounds of peas a week.   With that many peas it’s hard to keep up with eating them fresh so I wanted to show you how I freeze them to last for months.  Often I don’t have the extra time to blanch and dry the peas, so this is a easy no fuss way to freeze sugar snap peas without blanching.  (PS.  What else works great this way? Bok Choy!)

Chinese Pepper Beef Cubes

AMAZING tasting Chinese Pepper Beef Cubes – this easy to make Chinese dish is tasty and will have your family begging for it!  Serve beef and vegetables over white rice for a healthy authentic Chinese meal! 

Do you have a favorite Chinese dish?  I’m a big fan of Chinese soups (like salted pork and cabbage), Shrimp Chop Suey and I’m always down for Lo Mein.  One thing I always love in my dishes is a ton of vegetables covered in that delicious Chinese sauce they always smoother them in.   It doesn’t matter if it’s peppers, broccoli, carrots, water chestnuts or something else, I can’t say no to a yummy vegetable.

Right now being Winter I am craving fresh vegetables.  I am missing the green pepper overload from the garden.  I can’t wait to pick broccoli in the Spring. Thankfully we still have enough carrots left from Fall so I have those to survive on.  Over the weekend it was freezing (literally).  The wind was harsh, my knees were shaking and my gloves didn’t feel like they were doing much of anything. One thing I craved when I got home was a warm fresh meal, something that would take me out of the Winter blues. That’s how this Chinese Pepper Beef Cubes dinner was created.

Chocolate Covered Cherry Cookies

CHOCOLATE covered CHERRY cookies! Easy recipe for Peanut Butter Blossom Cookies with a chocolate covered cherry in the middle of each one!  The cookies are so soft and chewy, that kids and adults will consider them the best!  These are great cookies for Valentines Day, Christmas and parties!

This is my Valentine to you! It comes in the shape of a cookie with a milk chocolate covered cherry on top.  When you bite into one (good luck only eating one) you will see hearts in your eyes!

I’ve fallen in love with Santa Barbara Chocolates in the past weeks and have been baking up a storm with their chocolate chips too, but today this is all about these beautiful cherries that are hand dipped in their custom milk chocolate and filled with cherry juice (from Morello cherries) .   When you bite into one and feel that cherry explode into your mouth (getting sexy here) you’ll understand why.  I can honestly say these are the best chocolate covered cherries I ever tasted and trust me, I’ve done alot of tasting research in my days.

So there I was, sitting with this box of chocolate covered cherries, eating 1 by 1.  My brain said “Do something with them, be creative” while my belly said “Just eat them all”. So I combined these 2 wishes, I made cookies with them and then ate them all. :D)

These cookies are based on my favorite Peanut Butter Blossoms Recipe but with something a little extra (with a ton of flavor) – cherries!
The cookie base will melt in your mouth while the chocolate covered cherry has a little crunch when you bite into it.

Quick and Easy Refried Black Beans

We have tacos at least once a week, if I’m lucky maybe 2-3 times.   No matter if we’re eating them in a shell, in a bowl or in a casserole form, we always need Refried Beans!  I don’t think it’s Taco Night without the beans.    This is one of our favorite recipes for Refried Beans and it’s so easy to make.  All you’ll need is a can of  black beans, a jalapeno pepper chopped up to add some spice, and cilantro/salt/pepper to season.  Easy, right?    These beans are total Mexican restaurant style and is the perfect side for tacos and burritos.

Black beans have amazing protein-plus-fiber content. From one cup of black beans, you get 1/3 of your daily protein intake, it’s equivalent to eating 2 ounces of chicken or fish.   Those beans are healthy little protein giving guys, aren’t they?

These beans take 15 minutes – max.  Because we’re using canned beans, we don’t have to worry about overnight soaking like dry beans would need.  We also don’t need to use your slow cooker all day to soften them.  With this recipe we’re throwing everything in a saucepan and they’ll be done in a jiffy.

Even though I stress this recipe as quick and easy, it doesn’t lack in flavor. Even if I have all the time in the world for Taco Night, I’m still going to make the beans just this way.  If you are looking for regular Refried Beans with Pinto Beans, just substitute the beans in this recipe and cook the exact same way.

Quick and Easy Refried Black Beans (from a can!)

Ingredients
  1. 1 tablespoon vegetable oil
  2. 1 jalapeno pepper finely chopped up
  3. 1 15 oz can of black beans (don't rinse them - use straight from can)
  4. 1/2 teaspoon cumin
  5. salt + pepper to taste
  6. Additional: cilantro to garnish
Instructions
  1. Heat vegetable oil in small pot with jalapeno for 2-3 minutes over medium-high heat.
  2. Add can of black beans, cumin and salt + pepper into pot. Stir so everything is combined.
  3. Bring to a boil on medium-high heat and cook for 10 minutes, stirring very often. You want to boil off the excess liquid in this step.
  4. Once done, turn heat off and let sit for 3 minutes.
  5. If desired, put cilantro on top to garnish.

Slow Cooker Macaroni and Cheese With Sugar Snap Peas

Who doesn’t love macaroni and cheese? In this recipe we’re going to mix a comfort food favorite with some garden fresh sugar snap peas!  It’s the perfect combo of creamy and crunchy!

Lately I’ve been wearing 2 winter coats at the same time, it’s that cold.  Last night I was standing in the shower and was unsure if I was still freezing or the water was so hot it was burning me.  It’s that cold.   When I get home from work I grab all the cats at once, hold them against me and don’t’ release them until I am warm.  Ok, it doesn’t matter if I’m cold, I always do that. 

The storm last week in NYC wasn’t as bad as expected but we are expecting a little more snow today.  4 inches or 10 inches?  Who knows.   What I know is that all I want is warm food all the time during the Winter. It’s soup for lunch.  It’s a warmed up brownie for a late afternoon snack.  It’s tea nonstop.  And it’s this Slow Cooker Macaroni and Cheese With Sugar Snap Peas for dinner.
