Halloween in Disney World!

Happy Halloween gorgeous Ghouls!
Grab a bucket of candy, some apple cider and a black cat and let me take you on a journey to Disney World for Halloween!

A week ago, it was my birthday.  I’ve always wanted to go to Disney World for my birthday and Halloween so a couple weeks ago we booked the trip!  To say I was excited would be a understatement.  On my first trip to Disney a few years ago I stayed up late every night reading Disney forums and books, preparing myself.  For this one, I had the basics set but there would be a new celebration: Mickey’s Not-So-Scary Halloween Party!

Mickey’s Not-So-Scary Halloween Party is a Halloween Party that takes place in the Magic Kingdom on special nights in September and October.  It’s a separate park ticket (Disney is great at making money!) so they close the park down for only the Halloween party guests! They also keep the park open late on these nights.  We were there until 12AM dancing and collecting candy.

Collecting candy? YES! During the Halloween Party there are specific dedicated spots (usually next to rides) that you can line up and trick or treat.   Noone is too old for this! Me, Matthew and 2 friends – all over the age of 30 – had a blast going from stop to stop.  When you get into the park they even give you own trick or treat bag.  If you fill it up, you can get a new one and keep on going!  I haven’t been trick or treating in many years so it was lots of fun to get my sweet loot!

Did I mention costumes?  You have to wear a costume!  Disney has some of the best dressed characters, so you need to go big! Although I felt like the majority of visitors don’t go all out (the majority don’t wear a costume! *GASP*) we had to!  My costume changed about a hour before we left for the airport, but thankfully I have a few clown costumes laying around.  Everyone has clown costumes ready to grab for special occasions, right?

October is my favorite month and even though I’m sad to see it go in just a few days, it ends with the best holiday!  What’s not to love about Halloween?  You get to dress up, you get to be imaginative, you get to decorate with pumpkins all over your house, and noone looks at you weird at a parade when you knock over a kid to get that lollipop they threw out of that Halloween float.

Come Grocery Shopping With Me!

Do you like grocery shopping?  How often do you do it?  I’ve written before about how I do a fair amount of my shopping online so I wanted to introduce you guys to a new service called Farmigo which is a online farmers market that empowers families to eat better, bypassing the supermarket.

We had a explosion of vegetables during the Summer months to the point that we don’t usually buy any produce for a few solid months.  I know not everyone has their own garden though so Farmigo is great for those that still fresh vegetables while supporting local farmers.     You’ll see below that I did use Farmigo to order meats, cheeses, breads and a couple vegetables we don’t grow.   Their selection is wide and varied on the season.  I think Farmigo is great because unlike a CSA where you get a box of surprises, here you get to pick what you want.  If you are meal planning for the week then you know you’ll need tomatoes, basil, corn, hot dogs and hot dog buns.   This won’t result in you getting a box full of 4 heads of lettuce and figuring out what the heck you’re going to do do with them.

Waffles have been a go to breakfast for us lately, because they are both delicious and quick.  With frozen waffles, you throw them in the toaster oven for 6 minutes and they’re done.  Then it’s up to you how you want to eat them  – do you use syrup? How about jelly?  How about butter?  How about.. pumpkin butter?  

If you want to make your own fresh pumpkin puree for this recipe you totally can. Here’s my tutorial I made for it last year.  To me, nothing tastes better than homemade pumpkin puree. If you are going to make your own, use a sugar pumpkin.  They give you the most taste.  Plus, they are real beauties.

Ingredients
  1. 1 cup pumpkin puree
  2. 3 tablespoons apple cider
  3. 3 tablespoons maple syrup
  4. 1/2 teaspoon cinnamon
  5. 1/4 teaspoon nutmeg
  6. 1/4 teaspoon ground cinnamon
Instructions
  1. Mix all ingredients in a saucepan over medium high heat.
  2. Bring to a boil and then simmer for 20 minutes, stirring often.
  3. Enjoy right after on waffles, or put in mason jar in the refrigerator.

It’s almost Halloween – are you excited? I sure am.

My costume is ready, a giant pumpkin sits in our window lit up for Brooklyn, bite size chocolates sit on a table asking me to eat them and my Halloween treat bags are made for friends!  I know Halloween is usually set aside for kids, but as a Halloween loving adult, I know there are lots of us that still love Halloween even though we’re over the age of 15.   There’s something great about Halloween, maybe it’s the reason to be creative with costumes, maybe it’s spooky ghosts and pumpkins, maybe it’s decorating your house with orange, maybe it’s pumpkin baking season, maybe it’s the candy or maybe it’s just the memories of being a kid and going door to door to fill up your treat bag.

For Halloween this year I’ll be bringing treat bags to our studio space to give it to our friends there.  No matter the age, when someone gets a bag full of sweets and toys, it will make them smile.    While looking for treat bags, nothing really stuck out to me, so I decided I was going to make my own to stuff Skittles, Starburst, stickers and pencils in!

Let’s talk Halloween first.  Are you ready for it?  I said 2 weeks ago I was going to get the Halloween decorations out but I still haven’t as it’s been hectic here with work.  I wrote HALLOWEEN on 12 post-its posted all over our home though so I’m hoping this weekend it gets done!    One of the things I miss most being from a small town is trick or treaters and people decorating their houses to to the extreme.  Every year my Mom would go crazy with decorations from the windows to the door to the kitchen table.   I love giving out treats to trick or treaters and making them tell me about their costumes, but my neighborhood in Brooklyn doesn’t really have trick or treaters, plus I live in a loft building so it’s not like the kids are going to go apartment to apartment.  I miss it!  Do you get trick or treaters? What are you handing out this year?

It’s delicious.  It’s moist.  It’s chocolatey.  It smells the best.  I’m in love.  Do you know how good it is? My banana hating husband (GASP) runs to the kitchen when I make it to steal the first piece.  I hit his hands though.  The first piece is always mine.

The main ingredients are bananas, Nutella (or other chocolate hazelnut spread) and coconut flakes.   That’s what creates all the magic in this bread.

This recipe needs 2 bananas.  Riper is better.  Plus aren’t ripe bananas gorgeous?

Then you’ll need your Nutella and coconut.  When the Nutella bottle is done, it might be cleaned completely with a combination of my finger/spoon/tongue.  Please don’t ever let any Nutella go to waste.  It’s precious.  The coconut adds a little crunch to the bread and a little extra flavor.  It works perfectly in combination with this bread.

It’s amazing for breakfast.  It’s perfect for a after school snack. How about a afternoon snack at work?  Or dessert?  Or maybe just a piece whenever you want it because you deserve it!  This banana bread is my current favorite breakfast.  I love that it’s already made so I can just wake up, cut a slice and grab a seat to eat it.

Ingredients
  1. 2 cups flour
  2. 1 teaspoon baking soda
  3. 1/4 teaspoon salt
  4. 1 teaspoon cinnamon
  5. 1/2 teaspoon nutmeg
  6. 2 bananas
  7. 1/2 cup butter - softened
  8. 3/4 cup brown sugar
  9. 2 eggs
  10. 3/4 cup Nutella (or other chocolate hazelnut spread)
  11. 1/2 cup sweetened coconut flakes
Instructions
  1. Preheat oven to 350 degrees. Preheat oven to 350 degrees. Spray a bread loaf pan with nonstick spray.
  2. In a large bowl combine flour, baking soda, salt, cinnamon and nutmeg.
  3. In another bowl smash bananas so it becomes creamy. Then add butter, brown sugar and eggs. Mix with hand blender until combined.
  4. Add wet mixture into dry mixture. Stir in 1/2 cup Nutella and coconut and continue to mix.
  5. Pour mixture into bread loaf pan. Put remaining Nutella on top and with a spoon swirl it around to create a nice design.
  6. Bake for 60 minutes.
  7. Let cool and then serve.

We Grew Black and Yellow Beans!

The title says it all… we grew black and yellow beans this year!

In the past we didn’t have a bunch of success with bush beans in our 4×4 boxes so we didn’t have a lot of positive vibes, but something changed from that year to this year, because now those boxes are full of happy growing beans!  Next year we’ll be filing those boxes full of beans from Spring to Fall… I can’t wait!

This year we decided to give black beans and yellow eye beans a shot.    We planted the seeds on June 26 directly in the soil and we picked them on September 11.  From there, some were dry already while some others needed a additional 2 weeks to dry.

Wednesday Chit Chat & Some Favorite Things

Hi Friends,

It’s another Wednesday.  How are you doing?

Are you ready for Fall? Do you have your pumpkins already?  Are you all decorated for Halloween? Even though it’s my favorite holiday, I’m slacking a bit.  I’ve brought out a few of the Halloween ghosts and pumpkins, but there’s multiple boxes I need to get out from the loft to really get our place in Halloween shape.  Let the Halloween decorating begin!

Speaking of Halloween, are you dressing up this year? There is only one answer for this.  Yes!  I think I’m recycling a costume this year, but updating some of it, so I hope that counts as acceptable! My birthday is a few days before Halloween so we’re going on a birthday/Halloween vacation to Disney World. If you know me then you know my love for Disney is extremely strong… so to be celebrating happy day and trick or treating at Disney makes me so excited I will probably cry while doing it!
Speaking of, our Disney Magic Bands came in the mail…guess who is totally decorating hers with pumpkins? Yup!

I made these last week.  We already had them twice.  They are already being requested a 3rd time.  They are out of this world tasty.

For this recipe it’s full of fresh ingredients, down to the salsa which is made from just picked tomatillos, so let’s get started!

 The salsa is a mixture of salsa verde + red mexican sauce.  For the salsa verde I use my favorite recipe (found here) but I cut it in half.  If you can’t make it homemade, just buy a jar of it.

 The Red Mexican Sauce includes includes tomatoes, peppers, onions, salt, garlic and coriander. In other words, it’s delicious.

To give it a little bit of a extra kick I like to add green pickled jalapeno peppers to the slow cooker.  Once slow cooked the pickled flavor isn’t strong, but instead it’s more about the spice of the jalapenos.

Slow Cooked Tomatillo Salsa Roja Chicken Tacos
Print
For the tomatillo salsa roja
  1. 6 ounces tomatillos, husked
  2. 1/4 cup chopped onion
  3. 1/2 teaspoon minced garlic
  4. 1 jalapeno pepper, chopped
  5. 1 tablespoon cilantro
  6. 1 tablespoon lime
  7. 1/2 teaspoon dried oregano
  8. 1/4 teaspoon ground cumin
  9. 1 teaspoon salt
  10. pinch of pepper
  11. 1/4 cup water
  12. 1 chicken bouillon cube
  13. 7 oz can of La Morena Red Mexican Sauce
For the Slow Cooker Tacos
  1. Tomatilo Salsa Roja that you made above
  2. 2 pounds skinless, boneless chicken breast - cut in half
  3. 1 cup dry black beans
  4. 8 oz frozen corn
  5. 1/3 cup of La Morena Pickled Jalapeno Peppers - drained
Other
  1. Tostadas
Toppings of Choice
  1. Shredded Cheddar Cheese
  2. Diced Tomatoes
  3. Lettuce
  4. Sour Cream
  5. Avocado
  6. Cilantro
To make the salsa
  1. Place all ingredients except bouillon cube and Red Mexican Sauce in a blender. Blend until everything is combined and is salsa consistency.
  2. Pour salsa verde into saucepan and heat on medium high heat. Bring to a boil.
  3. Add bouillon cube and Red Mexican Sauce and stir into salsa verde.
  4. Once boiling simmer for 15 minutes.
To make the Slow Cooker Tacos
  1. Add salsa, chicken, dry black beans, corn and jalapeno peppers in slow cooker.
  2. Set on low for 7.5 hours.
  3. Shred chicken with 2 forks, put back in slow cooker. Cook for additional 30 minutes.
  4. Serve on tostadas and top with your favorite toppings (I do cheese and tomatoes!).

Do you love granola?

I know a boy who does. It’s my other half, Matthew. He loves it.  Last week Matthew became obsessed with granola again.  He goes through these spells of loving it.  There was a time last year where he was ready to have his midnight snack in bed and he realized he was out of granola. What did he do? Did he pick to eat something else? No, he got on his bicycle and ran to the grocery store at midnight to buy more granola.

Talk about dedication.

So yesterday we ran out of granola again.  I went to the grocery store and I couldn’t get over the prices of it.  Can someone explain why granola is so expensive? Seriously, $8 for 10 ounces?  They are crazy.

So after I got over (or didn’t get over) my sticker shock I decided to head back to my kitchen and make my own granola.  The benefits of making your own granola is that it’s much cheaper, you control the ingredients and you get to throw on your kitchen apron.  I love wearing my kitchen apron.  Total side note, but did you notice that as soon as you take your apron off in the kitchen, that’s when something splashes on you?  It always happens.

Ok back to the granola.  I wanted to make a quick granola.  So welcome Stovetop Granola in your life!  

What do you need for this Stovetop Granola recipe?  First you need a saucepan.  Now I have to show you the new love of my life.  Are you ready to swoon with me? Here it is!

Look at the color on that beauty! It’s called “flame” because it sets my life on fire.  

It’s my new Le Creuset Signature saucepan and I’m in love with it.  Matthew keeps asking if I have to take it to sleep at night and I’m like “duh”.  You know, it’s just me, Matthew, 4 cats and my Le Creuset tucked into our bed.  Talk about a happy family!

This saucepan pretty much makes cooking more fun (if that’s possible) due to the splash of color and how amazingly functional it is.  It keeps everything hot for so long.  Like my love for it.  Sorry guys, kinda crushing hard on this guy.  I think I should name him.  How about Mr. Love?

Now seriously back to the granola (I promise).

Melt your ingredients in your saucepan (pictured here inside Mr. Love).

Then add your quick oats and stir for around 5 minutes.  Make sure to get that wet mixture all over those oats.

Spread on a cookie sheet and bake for 8 minutes.

I like to let mine cool for about 30 minutes and then  break it up. And by break it up I mean rip off large chunks and throw them directly into my mouth.

Stovetop Cinnamon Vanilla Granola
Print
Ingredients
  1. 2 tablespoons honey
  2. 2 tablespoons brown sugar
  3. 1 teaspoon vanilla
  4. 2 tablespoons butter
  5. 1/2 teaspoon cinnamon
  6. 3 cups quick cooking oats
Instructions
  1. Add honey, brown sugar, vanilla, butter and cinnamon to saucepan over medium high heat until melted.
  2. Add oats and cook for 5 minutes.
  3. Pour on cookie sheet and bake at 400 degrees for 8 minutes.
  4. Let cool for 30 minutes and then break up into granola bits.
  5. Store in jar or plastic bag.

Wednesday Chit Chat – How Are You?

I used to love these weekly “how are you posts” but I fell off the wagon a bit.  But now I’m back and I’m ready to chat.  So how are you doing? How’s your family? How’s your cats? How’s your job?  How’s the weather?  Are you looking forward to the holidays?

I know, that’s lots of questions.  Take your time answering them.

I guess I’ll answer them too.

How am I doing?  
I’m caught a bug. No, not a cute little garden bug.  This is a sneezy, sniffly, ear ringing (I sound like a commercial) bug.  We’ve had a long week of working and as sometimes happens the day after nonstop work the body needs to crash.  My body crashed straight into bed.  I’ve been sniffling so much I’m sure I annoy everyone in our office (I’m sorry!).  Also I can’t really eat anything so I’ve been living on tea, juice and broth (but sometimes that grosses me out too).   Whenever anyone eats in front of me I have to go to the other room.  The smells! AGH!    Hopefully this will clear up in a few days… until then I’ll be moping around.
