Sweet and savory red onion jam that’s ready to store in the refrigerator. Red onions are caramelized in a pot and then simmered with red wine vinegar and spices until it reaches a jam. You need to try this on your burger and with crackers!
Add onions and vegetable oil into a large pot, heating over medium heat. Sauté the onions, stirring often until onions are softened and translucent, about 10 minutes.
Add in sugar, salt, garlic powder and black pepper into the pot, stirring to fully coat the onions. It might seem dry right now, but the onions are going to release liquid very quickly as they start to caramelize. Continue stirring until water dissolves, about 15 minutes.
Pour red wine vinegar into the pot, stirring, and allow to simmer on a low boil until it thickens up into a jam. I like to stir it every couple minutes, this usually takes about 30 minutes to reach jam consistency.
Allow to cool and then pour into a mason jar. Onion jam will last in the refrigerator for 2-4 weeks.

One batch makes approximately a 12 ounce jar of onion jam. You can double or triple it to make more.
