Ingredients
1/2cupunsweetened applesauce
1/2cupwhite sugar
1/2cupbrown sugar
2eggs
1 1/2cupsmashed banana
1/2teaspoonvanilla extract
2cupsall purpose flour
1teaspoonbaking soda
1/4teaspoonsalt
1teaspoonground cinnamon
1/2cupchopped walnuts
Instructions
Preheat oven to 350 degrees.
Spray a 9x5 loaf pan with nonstick spray.
Add applesauce, white sugar and brown sugar in large bowl and mix with hand mixer until combined. Beat in eggs, mashed bananas and vanilla.
Add flour, baking soda, salt and cinnamon and continue mixing. Add 1/4 cup chopped walnuts and stir with a spoon.
Pour batter into loaf pan. Sprinkle 1/4 cup remaining walnuts on top of the bread. Bake for 45-50 minutes (or until toothpick comes out clean).
