Summertime tomato tart with fresh heirloom tomatoes that tastes like pizza! Ricotta cheese is spread out on crispy pastry dough and then topped with slices of juicy tomatoes! Perfect for Summer dinner when you're growing tomatoes in your garden!
1tablespoonchopped fresh basilplus more for topping
1/4teaspoonlemon juice
salt and pepperto taste
1poundfresh heirloom tomatoessliced to ¼ inch thick slices
Instructions
Heat oven to 400 degrees F and cover a baking sheet with parchment paper.
Add 1 sheet of dough on the parchment paper, brushing with olive oil. Top with another sheet, brush that with olive oil. Repeat until all the dough sheets are stacked on top of each other. It's ok if some of the dough sheets rip!
In a bowl mix together ricotta cheese, basil, minced garlic, fresh basil, lemon juice and salt and pepper.
Spread ricotta mixture out on top of the dough, leaving a 1/2 inch border on all 4 edges.
Top with sliced heirloom tomatoes, spreading them out on top of the ricotta cheese.
Bake for 25 minutes, or until the edges are golden brown.
Allow tart to cool to set and then add additional fresh basil on top. Serve and enjoy this delicious tomato tart!
