This Fresh Roma Tomato Sandwich takes just 5 minutes to make and celebrates everything that’s good about summer. No mayo, no fuss — just juicy, crisp Roma tomatoes layered on warm, buttered toasted bread with a sprinkle of salt. It’s the kind of simple lunch or snack you’ll want to eat on repeat when your garden is overflowing with ripe tomatoes.
Spread butter on both sides of each slice of bread.
Heat a cast iron skillet or nonstick pan over medium heat, and add pieces of bread. Wait until bread is toasted on one side, and then flip to the other to toast. Remove bread from skillet and place on plate, preparing to make the sandwiches.
On one piece of bread, add basil leaves and tomato slices. Drizzle a tiny bit of olive oil on top of the tomatoes.
Add minced garlic on top of the tomatoes, spreading around evenly, followed by salt and pepper to taste.
Add top piece of bread on top of the sandwich, and gently press down. Now go eat this delicious fresh tomato sandwich!
