Ohhhh man, this is the gooey, cheesy vegetarian sandwich of my dreams! The fried green tomatoes have an awesome crispy cornmeal coating and the thick, buttered bread slices are also pan-friend for added crunch. Add in slices of ripe red tomatoes plus pepper jack cheese, and enjoy! Ready quick, like, 12 minutes.
1-2green tomatoescut up into 1/4 inch thick slices
1egg
1/2cupyellow cornmeal
1/4cupvegetable oil
2tablespoonsbuttersoftened
4slicesbreadpick your favorite
1-2red tomatoescut up into 1/4 inch thick slices
2slicespepper jack cheese
Instructions
In a medium bowl, beat the egg. In another bowl, add cornmeal. Dip slices of green tomatoes into the egg, and then into the cornmeal, shaking to remove any excess. Do this for all the green tomato slices.
Add vegetable oil into a large skillet, heating it over medium heat. Add the green tomato slices, cooking on each side until golden brown, about 3 minutes per side. Remove the tomato slices and place on paper towels to remove any extra oil.
Using another paper towel, wipe clean the skillet to remove vegetable oil. Heat the skillet again on medium heat.
Spread butter onto one side of each slice of bread. Place 2 slices of bread, butter side down, onto the skillet. Stack 2-3 slices of green tomatoes, 2-3 slices of red tomatoes, and a slice of cheese on each slice of bread. Top with remaining buttered slice of bread.
Cook until the bottom of the sandwich is brown, and then carefully flip and brown the other side. Do this to the other sandwich. Serve warm and enjoy this amazing fried green tomato sandwich!
Notes
The best type of bread for this recipe is thicker varieties, like sourdough or whole wheat. You can even use English muffins instead if you'd like!I love this sandwich with pepper jack cheese because it's a little bit of spice with the tomatoes, but you can use any type of cheese you'd like - American, Provolone, Muenster and more!
