Bread Machine Cucumber Chocolate Chip Bread

This easy bread machine cucumber bread is soft, moist, and packed with chocolate chips. Made right in your bread maker, it’s a fun and simple way to use up extra garden cucumbers! Recipe makes a 1 pound loaf.

Ingredients

  • 6 tablespoons vegetable oil
  • 1 egg beaten
  • 1 teaspoon vanilla extract
  • 6 tablespoons light brown sugar
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 Teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 1/2 cup cucumber grated
  • 1/2 cup mini chocolate chips

Instructions

  • Add all the ingredients (except cucumber and chocolate chips) to the bread machine baking pan in order listed in ingredient list.
  • Select the Cake or Quick Bread setting on your bread machine. On my Zojirushi bread machine, this is Cake Setting, #13. Check your manual to choose a cycle that bakes without a rising period. Set your preferred crust color — I usually go with medium.
  • When the machine beeps for add-ins, add in the cucumber and chocolate chips.
  • Once bread machine completes, allow the bread to cool in the pan for 15 minutes before removing it. Slice the bread and enjoy! I love a slice with butter on top. :)
