What to do with Thanksgiving leftovers? Make these Potato Patties! They are crispy on the outside and soft and creamy on the inside, ready in 20 minutes.

– Mashed potatoes (prepared as you usually make mashed potatoes) – Milk – Breadcrumbs – Yellow onion – Green onion – Egg – Dried parsley – Salt & pepper – Garlic powder

Start by combining all of the ingredients. Stir them all together in a bowl, so they are completely combined.

With your hands, shape into small patties. On average you should make about 14-16 patties from this recipe.

Coat a skillet lightly with olive oil and heat on medium-high heat. Add potato patties to the skillet and cook them for about 4-5 minutes on each side, or until browned.

Serve as is, with ketchup or sour cream, or any favorite sauce and/or topping.

Topping Ideas: – Sour cream and crumbled bacon – Applesauce – Ketchup – Hot sauce or salsa – Top with sautéed veggies – Or with bacon (or sausage), eggs and melty cheese
