Cheap and Easy Meal: Parsley Pesto Pasta

Let's talk parsley!

Throw frozen pesto cubes on hot pasta and you have a delicious easy weeknight meal.  I always have these in my freezer for a quick cheap meal.

INGREDIENTS You need parsley, garlic, Parmesan cheese, olive oil, walnuts and basil. 

This is a great way to use your garden parsley to last for months. First, remove the leaves.

It's also a  great way to use fresh basil. 

Add all of your ingredients into the food processor or blender.

And blend until smooth.

Oh la la! Yum! And it smells SO GOOD!

Spoon pesto into ice cube trays, cover and freeze.

Once frozen pop out of the cubes.

And place in a freezer bag.  Frozen pesto is good for 4 months.

And when you need a easy quick meal, add one or two frozen pesto cubes on top of hot pasta.

And stir...

.....until pasta is fully coated with pesto.

Serve and enjoy!
