In a large soup pot sauté onion and garlic in olive oil until it smells good and lightly browns.
Add in kale and stir until it wilts.
Add broth, beans, diced tomatoes and seasonings. Simmer.
In a small food processor or blender, blend the remaining 1 cup of broth and beans until they’re smooth. Add smooth broth and bean mixture into pot and simmer again.
Serve the soup in bowls. Enjoy!
