Add olive oil into a large pot over medium high heat. Once heated, add garlic, onion, celery and carrot and cook until the garlic is fragrant and vegetables soften - about 3 minutes.
Add broth, tomatoes, uncooked rice and a sprinkle of salt and pepper to taste. Stir.
Bring to a boil and then reduce heat, cover and simmer for 20 minutes, or until rice is fully cooked.
