115 ounce can black beansrinsed and drained
1/4cupgreen bell pepperfinely chopped
1 1/2teaspoonsground cumin
Preheat oven to 400 degrees.
Bring the quinoa and vegetable broth to a boil in a medium saucepan. Reduce heat to low, cover, and simmer until the water has been absorbed. This takes about 15 minutes.
Add black beans to a large bowl and mash with spoon. I like to mash them about 75% of the way, still leaving some whole black beans in the mixture. Add in cooked quinoa, oats, green pepper, onion, minced garlic, cumin, salt, cayenne pepper and egg. Mix so it's completely combined.
Form the mixture into 5 patties, using your hands.
Place patties on nonstick baking sheet or silicone baking mats. Bake for 30 minutes, flipping them halfway through. Remove from oven and serve on buns with your favorite toppings.
