Solar Oven Blueberry Cornbread Muffins
Solar Oven Blueberry Cornbread Muffins that are baked in 30 minutes in a solar stove, no electricity needed! These are so easy to make, perfect for camping trips!

Ingredients
1/2
cup
cornmeal
1/2
cup
flour
1/4
cup
sugar
2
teaspoons
baking powder
1/2
teaspoon
salt
1/2
cup
water
1
cup
blueberries
Instructions
For solar stove
Add cornmeal, flour, sugar, baking powder and salt to bowl. Mix.
Add water. Mix.
Add blueberries and gently mix with spoon.
Pour into silicone baking cups and bake for approximately 30-35 minutes with full sun. For cloudy days, extend baking time.
For regular stove
Preheat oven to 400 degrees.
Add cornmeal, flour, sugar, baking powder and salt to bowl. Mix.
Add water. Mix.
Add blueberries and gently mix with spoon.
Pour mixture into 8x8 pan that's been sprayed with nonstick spray.
Bake for 22-24 minutes.
Allow to cool and cut into squares.
