Perfect for CHRISTMAS, GLUTEN FREE Sugar Plum Apple Currant Pie! This easy to make pie recipe shows you how to make a gluten free pie crust using pecans, brown sugar and gluten free flour. The fruit filling is tossed with sugar and spices to make a delicious pie! This is one of the best pies, perfect for Christmas and Thanksgiving! Preheat oven to 350 degrees and butter a 9 inch pie pan. Set aside.
For the crust:
Combine pecans and brown sugar in a food processor until grainy and well combined. Add in flour, butter, vanilla, egg and salt and pulse until a ball forms.
Press dough into the buttered pie pan and chill in the freezer for at least 30 minutes, covered. This dough can be frozen up to a week if you want to make the crust ahead of time.
For the pie:
While the crust chills, peel the apples and thinly slice by hand or food processor. Remove pits from plums and chop. Add apples, plums and currants into a large bowl.
Add flour, sugar, cinnamon, cloves, allspice and lemon to fruits in bowl. Toss pie filling so everything is combined.
Using a fork, poke a few holes in the bottom of the frozen pie crust and then pour the fruit filling into the pie crust.
Bake for 60 minutes or until the filling is bubbling and crust is golden brown.
Allow to cool for 15 minutes before serving. Sprinkle powdered sugar on top if desired.
