Banana Oat Cookies that taste just like banana bread! This healthy, easy to make recipe makes 3 dozen cookies filled with oatmeal, walnuts, and chocolate chips! These cookies are soft and packed with protein and fiber to make the best breakfast or dessert!
Preheat oven to 350 degrees. Spray 2 cookie sheets with nonstick spray.
In a large bowl cream together butter and brown sugar with hand mixer. Add in bananas, egg and vanilla and continue to mix. In the middle of the bowl add flour, baking soda, salt and cinnamon. Continue to mix so everything is combined. Finally add rolled oats, walnuts and chocolate chips and mix with a spoon so they're equally distributed.
Drop cookie dough by the tablespoon on cookie sheets. Leave about 2 inches between each one as they will expand.
Bake for 9-11 minutes, until bottoms are slightly brown. Remove from oven and allow to cool before eating.
