Add sesame oil in a large non-stick skillet over medium high heat. Add pork, green onion and frozen vegetables, and cook until pork is fully cooked, stirring often - about 10 minutes.
Transfer pork and vegetables into a bowl and put skillet back on the stove top.
Reduce heat to medium and crack eggs open into the skillet, scrambling with a whisk. Cook until eggs are scrambled.
Add pork and vegetables back into the skillet, along with cold rice, soy sauce, garlic powder and ginger. Stir to fully combine, chopping up any large chunks of rice. Cook until everything is heated, about 5-7 minutes.
