2poundsRusset potatoespeeled and cut into quarters
1/4cupbutter
1/2cupmilk
1/4cupfrench onion dip
1pinchsalt and pepper to taste
Instructions
Bring a large pot of salted water to a boil. Add potatoes and cook until a fork easily slides through them, about 20 minutes. Drain the potatoes and put back into pot. Place pot back on stove burner to keep warm.
In a small saucepan add butter and milk, cooking on medium heat until the butter is completely melted.
Add butter/milk mixture and onion dip into potato pot. Use a electric hand mixer or potato masher and mix until potatoes are creamy. Add a pinch of salt and pepper to taste, mix again.
Serve and enjoy. Optional: add finely chopped fresh parsley on top when serving.
