Lazy Daisy Oatmeal Cake

  • 1 cup old fashioned rolled oats
  • 1 ¼ cup boiling water
  • ½ cup butter
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 ½ cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg

For the topping:

  • ¼ cup butter softened (not melted!)
  • ½ cup brown sugar
  • 1 tablespoon milk
  • cup chopped walnuts or pecans
  • 1 cup shredded unsweetened coconut


  • Preheat oven to 350 degrees.
  • Add rolled oats into bowl. Pour boiling water over oats and stir them. Cover bowl with a towel and let stand for 20 minutes.
  • Add butter, sugar and brown sugar to a large bowl. Beat with hand mixer until fluffy. Add in eggs and vanilla and continue mixing. Add in rolled oats, continue mixing.
  • In another bowl, mix together flour, baking soda, cinnamon and nutmeg.
  • Add flour mixture into oats mixture. Continue mixing until all combined.
  • Spray a 8x8 broiler-safe baking pan with nonstick spray and then lightly flour. Pour mixture into the pan. The mixture is going to be very wet - don’t panic, it’s supposed to be.
  • Bake for 55 minutes.
  • Remove from the oven and let cool for 10 minutes.

For the topping:

  • Add softened butter, brown sugar, milk, walnuts and coconut to a bowl. Use a hand mixer and gently mix until you have a crumbly mixture. Use a spatula and spread this evenly over the cake.
  • Put cake back into the oven and broil on LOW for 2-4 minutes. Once the topping starts to bubble, remove from oven. You want the topping to be slightly browned. Watch it carefully, you don’t want it to burn.
  • Allow to cool before cutting into pieces and serving. Cake can be enjoyed warm or cold.
