BBQ Slow Cooker Chicken Thighs

BBQ Slow Cooker Chicken Thighs recipe that my family loves!  Throw these boneless chicken thighs in the crockpot for 2 and a half hours and then serve over rice for a easy complete meal! Keto and low carb recipe.

  • 2 pounds boneless chicken thighs
  • 1 small onion chopped
  • 1/4 cup soy sauce
  • 1/4 cup BBQ sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 cloves garlic minced
  • 1-2 teaspoons cornstarch for thickening
  • 1 16 ounce bag frozen three pepper blend


  • Add chicken thighs to slow cooker on bottom.  Add onions on top. 
  • In a bowl mix soy sauce, BBQ sauce, ketchup, brown sugar and garlic together.  Pour over onions and chicken thighs.
  • Cook on high for 2 hours.
  • Add 1-2 teaspoons of cornstarch to slow cooker, depending on how much thickening the sauce needs.  Use a fork to quickly whisk it so cornstarch doesn't get clumpy.
  • Add bag of frozen peppers to slow cooker.
  • Cook on high for a additional 30 minutes.  
  • Serve this meal over rice and enjoy!



Want to use fresh green peppers instead of frozen peppers?  Use 3 small-medium sized green peppers, about 1 pound.  Add the peppers in with the onions in the first step.
