You have to make these Apple Pie Pancakes during apple picking season! Not only are they easy to make, but they always turn out super fluffy, are freezer-friendly, and taste just like apple pie.
Combine flour, sugar, baking powder, baking soda, salt and cinnamon in a bowl in a large bowl.
In another bowl mix together milk, egg, oil and vanilla until combined.
Pour wet mixture into dry mixture bowl. Mix until completely combined. Add in chopped apples and stir with spoon.
Pour 1/3 cup of batter for each pancake on pan, over medium high heat. Cook pancakes until golden brown and then flip to the other side, about 2 minutes on each side.
