Chocolate Chip Pumpkin Vegan Pudding

  • 1 cup chocolate chips
  • 1 1/2 cups pumpkin puree
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar


  1. Place the chocolate chips in a microwave save dish.  Heat for 30 seconds and stir.  Continue to heat in 10 second increments until the chocolate chips are completely melted. 

  2. Put all ingredients into a food processor and pulse until it is smooth. 

  3. Put in bowl and chill in refrigerator until firm, reaching a pudding consistency.

  4. Serve in bowls,  with additional chocolate chips on top if desired.
