Ingredients

  • 1 can black beans - rinsed and drained
  • 1 can hominy - rinsed and drained
  • 4 ears corn - kernels sliced from cob
  • 1 can Ro*Tel Diced Tomatoes and Green Chilies
  • 1 bell pepper - chopped
  • 1 1/2 teaspoons ground cumin
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1/4 cup chopped cilantro

Instructions

  1. Place corn in large pot of boiling salted water and cook for 3 minutes.
  2. When corn is cool, cut kernels off cob.
  3. Combine all ingredients in a bowl.
  4. Serve and enjoy.
