  • 1 cup chopped pecans
  • 3/4 cup packed brown sugar
  • 1/2 cup butter
  • 3/4 cup white chocolate chips
  • 1/2 cup rainbow sprinkles

  1. Spray a 8x8 pan or chocolate mold with nonstick spray.

  2. Spread pecans on the bottom of the pan, covering completely.

  3. In a small sauce pan melt brown and butter over medium high heat, until melted completely.  Bring to a boil and constantly stir for 5 minutes.  Immediately pour mixture on top of the pecans.

  4. Sprinkle chocolate chips on top of the butter mixture, covering completely.  Add rainbow sprinkles on top.   Place a cookie sheet on top of the pan and let sit for 5 minutes, allowing the chocolate chips to melt.  Remove the cookie sheet and gently press down on the toffee to make it smooth (I do this with my hands).

  5. Place in the refrigerator overnight to become firm.  Serve immediately or store in refrigerator.
