Creamy Pasta with Cauliflower

This recipe for pasta with cauliflower is a simple, satisfying dish! Rotini pasta noodles are tossed in a creamy parmesan cheese sauce with steamed cauliflower and lettuce. A quick, easy and delicious dinner that’s perfect for busy weeknights!

  • 16 oz box rotini pasta
  • 1 medium size cauliflower head chopped into bite size pieces
  • 2 tablespoons butter
  • 2 cloves minced garlic
  • 2 tablespoons flour
  • 1/2 cup chicken broth (you can also use vegetable)
  • 1/2 cup milk
  • 1 teaspoon dried parsley flakes
  • salt + pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup lettuce chopped


  • Cook pasta as instructed on box. With 3 minutes left, add cauliflower. Drain, put back in pot and set aside.
  • Melt butter and garlic in a medium saucepan. Add flour and cook for 1 more minute, stirring, until it's a creamy butter mixture.
  • Add chicken broth and milk, continuing to stir for a few minutes until sauce thickens.
  • Add parsley, salt + pepper and Parmesan cheese. Keep stirring!
  • Pour cheese sauce over pasta and cauliflower in pot. Add in chopped up lettuce. Stir so the creamy sauce covers everything.
  • Serve hot, enjoy.


This pasta is delicious as-is, but you can switch up the ingredients to customize the recipe to your tastes.
Protein: Try topping your pasta with grilled chicken, shrimp or sliced steak.
Pasta: While I often use rotini pasta noodles for this dish, other options include linguine, farfalle, penne or even cheese tortellini.
Vegetables: Try using kale or spinach instead of regular lettuce. You can also add other veggies into your pasta such as sautéed red onions or mushrooms.
