Kale Cheese Sandwich

HEALTHY, Kale Cheese Sandwich that is only 250 calories! This delicious sandwich recipe is perfect for lunch or a vegetarian dinner! 


  • 2 slices of bread
  • 2 handfuls of kale - washed and dry
  • 1 handful of arugula - washed and dry
  • olive oil
  • lime juice
  • salt + pepper
  • tomato - 4 slices
  • 1 slice of Provolone cheese


  1. Add kale and arugula in a small bowl.
  2. Add a drizzle of olive oil, a few drops of lime juice and a sprinkle of salt + pepper.
  3. Massage the greens gently for a few seconds to coat in the olive.
  4. Put your bread on a baking sheet.
  5. Add your greens evenly on each piece of bread.
  6. Add your tomatoes on top.
  7. Rip your slice of cheese in half and put a half on top of each sandwich.
  8. Bake in toaster oven at 350 degrees for 5 minutes.
  9. Take out of the oven, sprinkle additional salt + pepper on top and serve.
