Sugar Free Apple Muffins

Mini Sugar Free Apple Muffins Recipe! They are only 48 calories a piece!  These easy to make healthy muffins are perfect for apple picking season!  I love them to work for breakfast or a afternoon snack! Makes 20 mini muffins.

Ingredients

  • 3/4 cups whole wheat flour you can use all purpose if you want
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup blueberries smashed
  • 1/2 cup almond milk I recommend Unsweetened Vanilla or Unsweetened Vanilla/Coconut
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup apples - peeled and chopped this equals one small apple

Instructions

  1. Preheat oven to 400 degrees.
  2. Spray mini muffin pan with nonstick spray.
  3. In a large bowl combine flour, baking powder, salt and cinnamon.
  4. Make a well in the middle of the bowl and add smashed blueberries, milk, egg and vanilla. Mix with a fork until all ingredients are combined.

  5. Add apples and stir gently.
  6. Spoon batter into muffin pan evenly.
  7. Bake for 11-13 minutes, until the sides of your muffins are slightly golden brown.

Recipe Notes

This makes 20 mini muffins or 6 regular size muffins.
If you are making regular size muffins, bake for 20-22 minutes.
