Banana Oat Cookies

  • 3/4 cup butter softened
  • 1 cup brown sugar
  • 3 ripe bananas mashed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 cups rolled oats
  • 1/2 cup chopped walnuts
  • 1/2 cup mini chocolate chips


  1. Preheat oven to 350 degrees. Spray 2 cookie sheets with nonstick spray.
  2. In a large bowl cream together butter and brown sugar with hand mixer. Add in bananas, egg and vanilla and continue to mix. In the middle of the bowl add flour, baking soda, salt and cinnamon. Continue to mix so everything is combined. Finally add rolled oats, walnuts and chocolate chips and mix with a spoon so they're equally distributed.
  3. Drop cookie dough by the tablespoon on cookie sheets. Leave about 2 inches between each one as they will expand.
  4. Bake for 9-11 minutes, until bottoms are slightly brown. Remove from oven and allow to cool before eating.
