BUTTER GARLIC ZUCCHINI PASTA

Looking for a quick zucchini pasta recipe made in 25 minutes? This recipe features perfectly cooked pasta tossed in a buttery garlic sauce with browned zucchini slices.

how much zucchini do i need?

You will need 1 pound of zucchini, which is about 2-3 zucchini depending on the size.

which pasta is best?

For this recipe we prefer a longer noodle, like linguini, spaghetti or fettuccini. But you can use a smaller noodle like rigatoni, penne and bowties too!

HOW TO MAKE

1. Cook pasta until al dente, then drain, saving some of the water for the butter sauce.

2.  In a skillet, sauté minced garlic, olive oil, butter, and salt until garlic is lightly browned and butter is melted.

3. Add zucchini slices to the skillet and cook until browned.

4. Add cooked pasta, reserved pasta water, and additional olive oil to the skillet. Stir to coat the pasta and zucchini in the sauce.

5. Serve the zucchini pasta with a sprinkle of Parmesan cheese on top. Enjoy!

1. Look for firm zucchini with vibrant green skin. Avoid any that are soft and cut off any blemishes. 2. For consistent cooking, try to slice the zucchini into uniform rounds or half-moons. This will ensure they brown evenly.
