These zucchini corn fritters are pan fried on the stove top. They taste crispy on the outside and so creamy inside! This is a sneaky way I add vegetables to my family’s diet!
If it’s Summer, and you’re a gardener, you are probably picking a couple zucchini every week, or even a couple per day! Try making these zucchini fritters - you can even freeze them!
Zucchini contains 95% water, so it’s important that we try to get as much moisture out of it as possible. I like placing it in a colander above the sink, and using my hands to press down, removing the water.
1. Grate zucchini and then drain it with the corn.
2. Make the zucchini batter.
3. Add in skillet in small pancake sizes.
4. Fry and brown on both sides.
5. Serve warm and enjoy!
