These Christmas cookies are so soft because they're made with 1 cup of ricotta cheese!

Step 1:  cream together wet ingredients until smooth with an electric hand mixer.

Step 2:  In another large bowl, mix together the dry ingredients.

Step 3:  Then combine with wet ingredients to form ricotta cookie dough.

Step 4:  Roll dough into one inch balls. The dough is sticky so I suggest adding flour onto your hands to easily roll. 

Step 5:  Place the cookies onto a prepared cookie sheet.

Step 6:  Bake cookies until golden brown.

Step 7:  Make the glaze in a shallow bowl. This is a simple powdered milk and sugar mixture.

Step 8:  Dip the cookies into the glaze one by one and then place on parchment paper. 

Step 9:  Now add Christmas sprinkles on top!

If it’s not Christmas time, you can still make these with rainbow sprinkles! They are good any time of the year!
